The bread gets burned and the cheese doen't melt all the way. And the sandwich gets very very flattened!

The butter is right out of the fridge, and so is the cheese.

Take the cheese out of the fridge for a few minutes prior to heating stove. The butter will burn easily, keep the heat low and cook sandwich slowly. It helps also, if you toast the bread in a toaster prior to placing in skillet. Do not apply pressure with spatula.

You need the butter at room temperature or softened in the microwave. It takes less than 5 seconds so be careful.

Butter the bread instead of putting the butter in the pan. If the bread is burning before the cheese melts you probably have the heat too high on the pan. Turn it down.

If you are using low fat cheese it doesn't melt very well but a sandwich is not impossible. The only way it can get flattened is if you are squishing it with the spatula. There is no need for this.

when I make grilled cheese, I use velveeta cheese and mayo sandwiched between 2 slices of bread, with butter on both sides. I cook them in a teflon coated shillet over medium heat until both sides are browned. You can set a timer for 2 to 3 minutes and then flip it to cook the other side... you can also cook Peanut Butter and Jelly sandwiches the same way for a different flavored treat!

when I want to get it right, start will a small splash of oil. then add the butter This will raise the smoke point of the oil and prevent it from burnning too quickly. Low temp. When you do flip the sandwich( try with thick texas size cuts of bread) turn off the heat and cover the pan in the lid to create an oven inside the pan. A little patience and voila - le grand fromage.

If you make your G/C/S in a skillet, you can't walk away and do something else; you have to stay there and watch it. You could use an egg timer to judge when to turn the sandwich over on the other side. Make sure the heat is just right.

Another option is to heat the oven to about 400° F. for about ten or twelve minutes. Then assemble the sandwich and wrap in aluminum foil. Make sure the foil is smooth and flat against both sandwich sides to be toasted. Place the foil wrapped sandwich on a metal pie pan and put in the hot oven. After 8 minutes turn the sandwich over, Leave in another 5 minutes and remove from the oven and enjoy. (Be careful when unwrapping).

btw, oven temperatures vary; 350°F. may be better with your oven.

First you put skillet on medium heat. That way the bread won't burn before cheese melts. Then put in generous amount of butter in skillet. Then place sandwich in skillet and let it brown on one side for two minutes then flip over repeat. Until sandwich is golden brown, and cheese is melted.

Turn the heat down to way low. Don't be surprised if these things take 10 minutes to make. Another option is put them in the broiler for a minute to finish melting the cheese. Just keep an eye on them because they will burn very fast down there.

Why don`t you make an open sandwich, cheese on toast, grate the cheese add a bit of milk and mustard and mix together, grill one side of the bread then put the mixture on the other side then grill until melted and bubbly, delicious!

No, not the cheese. Its the temperature your cooking it at. It's too high.
Gat a pan big enough to hold 2 slices of bread flat.
Butter the pan.
Put 2 sliced of bread in pan.
2 slices of amer. cheese on each slice.
Cover with a lid and add a drop of water to pan to make steam.
Add bacon or tomato and put the perfect sandwich together.

I leave 1 stick of butter out full time and butter bread on the sides that will be on pan,turn heat to medium low and flip when it's golden brown.About 5 minutes on each side.
