this is how it goes.
the parents can make you go to AN appointment. Meaning if you wont go willingly, they CAN call the police and they will take you in to see a therapist. However, they can only do that if you are in danger, either of hurting yourself or hurting someone else.
having an eating disorder counts as hurting yourself.
then from that appointment, the doctor decides if you need to be hospitalized, or if you need to go to therapy. Since you arent 18 you really dont have the final say in your treatment plan. if the therapist recommends therapy, and your parents agree, you have to go, otherwise they will hospitalize you.
and if you are hospitalized, your parents no longer decide the plan either. When it comes to medications, parents and patients can refuse treatments, and of course you have rights. but the doctors have the final say in whether or not you stay.
you get a 72 hour observation period, and then after that they either decide you are well enough that you dont need to be hospitalized, or they decide you need to stay longer.
the longer you refuse to cooperate...the long you will stay. your parents sign papers saying they are handing the right to take you out at any time to the doctors, and can no longer come and just save you when you get homesick.
im telling you from personal experience, and lots of it, getting help really is a good thing. it might seem like you dont need it, or maybe you just dont want it, but it works out to be the best thing

Yes. If you are potentially harming yourself or suspected of being in a poor mental health state and are under the age of 18 (in most states), you can be forced against your will to see a counselor, etc. From personal experience as well as professional experience, it might not be so bad if you agree to go. It's not as scary or painful as it may seem; actually resisting the help is more of a struggle. I do, however, understand that it's about YOUR issues and it is a sensitive subject when others cross over into your private world of coping.
Best of luck to you...

I believe the law still stands that you are under the legal guardianship of your parents until your 18th birthday. (In some places it may still be the 21st birthday) When a child has a serious illness and the parents do not have the child treated medically, the parents can find themselves in legal trouble.
If a 15yr old were to die from the eating disorder (and some do), the parents would be facing "child abuse / neglect charges contributing to the death of the child"
Appropriate treatment for eating disorders is both medical and psychiatric / psychological care.

It varies a lot from state to state, at least in the United States. For most states I think that you can be as a teen, but they can't make you talk. Though, I caution you that they can also hospitalize you if you don't make "satisfactory progress" or if you get worse.
My suggestion to you is to work with it. Most counselors and whatnot do really want to help you and to work with you. I am sure that you probably aren't liking the idea but the people around you are just trying to help you in the way that they believe is best.
Bottom line, take care of yourself. You are a valuable person who deserves to be loved and cared for without conditions. The best of luck to you.

Yes, you can. Yoiur parents can make you go if they feel you need to. They are responsible for you, your health, and your well-being until you turn 18. If your parents don't seek help for you the government could step in and make you go to counseling. If you know you have a problem the first step for you is to accept that you have a problem and to seek help for yourself. If you go into counseling with the attitude that you don't need help, you will have less success in getting well.
