What is your diet? or just simple.. what do you like to eat? that sounds so I dont know. can I say, "what does your diet consist of"? but not that I want to talk about dieting.... please help.

How about asking what their favorite foods are?
Like, hi, how are you, what's your favorite food?
Italian, American, Mexican, Chinese etc>>>>
They will perk up and say "STEAK"

If you are going to be cooking or serving new people, it would be very natural to ask what sort of things they like or maybe, is there anything you can't have? So many people now days have allergies to many things, so it would seem and be considerate of you to ask:-)

You just say " What kinds of food do you like?"

ask if they have any food restrictions, like dairy, wheat?
That'll get things started.
