ORANGES WITH LEMON CREAM
4 navel oranges, peeled and segmented
For the Lemon Cream:
2 C. plain low-fat yogurt
3 Tbs. Honey
3/4 tsp. Lemon zest*
1 Tbs. Plus 1 tsp. Lemon juice
Combine first 4 ingredients in a bowl. Serve oranges in individual serving bowls. Top with lemon cream. Serves 4.
*Grated zest is simply the grated rind (outer colored portion) from citrus fruits. To grate zest or rind, take a box grater and rub the fruit against the grater. Do not rub the fruit down to the white inner skin, known as the pith, because the pith is bitter.
Suggestion: If you are traveling with the Orange dessert and don't want to use anything breakable, put the dessert in pretty paper cups.

Easy ice cream cake
Create a layer of ice cream sandwich bars in the bottom of a 9 x 13 pan. Melt, then pour a jar of hot fudge or butterscotch ice cream topping over the ice cream sandwiches. Soften, and then spread a large container of whipped topping (cool whip) over the topping. Crush up some oreos and sprinkle across the top. Pop into the freezer for a couple hours. Yum-yum!

TACO DIP!!! Take an 8 ounce pkg of cream cheese, blend w/1 package taco seasoning. Now, layer. Cream cheese, shredded cheese, diced tomato, shredded lettuce. Serve w/tortilla chips. A variation I use sometimes is saute the taco meat and layer that in as well for a "warm version"
