Long story. Crucial dates: Constantine officially "introduced" Christianity to the Roman empire (at the point of a sword). That was in the 4th century CE. Then in 410 CE the Goths under Alaric sacked Rome. (Eventually the Goths also converted, such as it was. Again, the sword helped.) Finally in 476 CE the empire was split "for administrative reasons." The Eastern portion, based in Constantinople, continued in some form or other for another thousand years. But the Western portion slid into decay and what we now call the Dark Ages. Imagine: roads degrading, schools closing, government failing, famine, drought, pestilence, war. Some historians put the "end" of the Dark Ages around 800 CE, which is when Charlemagne was crowned as a much lesser emperor. Some others think it finally ended with the Renaissance or the Enlightenment. Some people think we're still in them!

It has to do with not keeping a good record of your history (hence 'Dark Ages'). It also has a little do with the transition from classical Roman times to the high middle ages. But it has nothing to do with religion (or as to say it wasn't caused by religion).
