Thank you to everyone who answered! You've all given me some wonderful advice and somethings to really think about and consider.
I hate that I can only choose one best answer, but I have given you all thumbs up, and I will look at your own Q's and give you some stars (if they aren't set as private) :o) :o) :o)

I attended three weddings this year, plus my own. I'll try to suggest something fun or memorable from each wedding...
At one wedding they made the guests play a game in order for them to kiss, rather than just clanging glasses. The DJ/MC they hired had a "wedding wheel" and whoever wanted the bride and groom to kiss had to spin the wheel. It had little things on it like "Dance" or "Sing" or "Kiss." Whatever it landed on, the person who spun the wheel had to do that. If it landed on kiss, the person would have to get their significant other and show the bride and groom how to kiss, then the bride and groom would follow.
At another wedding, each wedding party couple entered the reception to their own song. The bride and groom picked a song for each couple. Try to think of something that they might have in common and choose a song along those guidelines.
Another wedding had a "speaker's corner" type of thing. We liked that idea, so we borrowed it. They set up a video camera in a quite corner with a chair, with instructions on how to record. Whoever wanted to say something to the couple just sat in the chair and recorded their message.
I think my wedding had a lot of unique, memorable and fun moments...
- Our recessional song was the Star Wars theme, everyone flipped out and started laughing. That was a great moment.
- We had our reception in a big Irish pub, that was so different and everyone loved the "untraditional-ness" of it.
- Everytime our guests clanged their glasses, we did a different kiss. A big sloppy one, a nice romantic one, a kiss on the cheek (we got booed for that one).
- The most memorable thing that made our wedding stand out more than anyone's was the ceremony. Our Pastor created a wonderful sermon for us about hands. How his (my husband) hands are the hands that will hold me when I'm scared and wipe tears away, etc and how my hands are the hands that will draw our kids so near and hold him when he is weak. It was beautiful, I don't think that there was a dry eye in the church.
So, my best piece of advice would be to personalize your ceremony. Everyone does the same ol' thing, try to make your ceremony fit you.

My daughter's wedding in May is my most memorable. After planning for so long and stressing out over everything, it turned out to be perfect from start to finish. It was a small wedding (125 people) and we did all of the decorating in the church and the reception hall ourselves and it looked so beautiful. The most memorable moments were seeing my husband coming through the doors in the back of the church to walk our daughter down the aisle, and singing a song he wrote for her at the reception. He could hardly get through it and had everyone there crying.
Another thing they did at their reception which made it special was make all of the children feel welcome. They had little gift bags made up for each child and had a candy toss. Best wedding I've ever been to.

I think our wedding was pretty great; we had a number of people tell us it was the best wedding they ever went to. I don't think we did anything remarkable except that we had a great time at every stage of it. We both smiled and laughed our heads off all day, and danced till we wanted to drop. The more fun you have, the more fun your guests will have. If you are tense and anxious the whole day, people will notice. Cut loose and have a good time!

as a child i remember going to weddings for family memebers-one is memorable because my uncle was so drunk he was break dancing and spinning on his back the entire time and another was cool because it was more like a family reunion than a wedding at my grandparents house and me and all my cousins got to play. not really sure you can use those ideas unless you have crazy dancers!
being an adult the weddings i've gone to have been too stiff and formal to really have a great time for something to stand out. all my friends who have gotten married had a large formal wedding with many guests and that I dont like. i dont like having too many people around especially when the guest list includes people like your neighbors boss because you met them after getting engaged or cousins friend from elementary school because you played soft ball together as a child. sure they had dancing and open bars but with too many people around its hard to really enjoy the night (as a guest, not as the bride or groom)
i suppose i didnt give good ideas, but hopefully some things to think about and maybe avoid

i went to a wonderful wedding this summer, and i think it was made great because there were a lot of personal stories brought in, so we all had a good laugh! and they generally had people sitting with other people around their age, so there were always a lot of great conversations going on, even between people that did not know eachother prior!
One thing to avoid, the service was terrible! They were rude and inconceterate .. keep that in mind!
Best of luck and i hope that helped!

My step-son's wedding was memorable. They were married on the beach on Cape Cod. It was very small, just my steppie, his bride, her brother, his mom, his dad and me, and my son. The reception was at a hotel restaurant.
