It depends on the gal, I'm afraid. However, generally, a change in her normal ways is a good indication. She may get more chatty--or more quiet--because she's nervous. She may try to get his attn. more if she's naturally outgoing, or try to shrink away because she feels especially shy. She may even be especially defensive about him, or pick on him.
Generally, though, she will probably try to find excuses to be near him, touch him, or watch him (often on the sly).
Best way to test the waters? Go talk to her. Very few girls don't appreciate the chance to talk with the guy of interest. And if she seeks out more chances, chances are there is at least some interest.

She puts her hair back behind her ears. She look at him a LOT. & she laughs at his jokes even though it's not funny.
