For example: I need to cook some chicken breast so than I can shred it and make tortilla stew. I really suck at cooking chicken on the stove. And if a recipe calls for it I just won't make the dish at all. I usually think the meat looks and smells wierd and that I did it "wrong". What methods/other ingredients do you guys use for something like this? Can I bake it in the oven (like I do for my other chicken recipes) and then use it in other dishes? I know that's probably a dumb question, but there are some things I just don't know how to prepare properly. Thanks for your help!!

Ok, thanks. If I bake it would I do 350 degrees for 30-35 minutes? what's safe?

Sure you can bake it. No matter how you decide to cook it, you need to get the internal temp to 165 F. Buy yourself a cooking thermometer (I use mine ALL THE TIME), they are very handy.

When I cook chicken on the stove, I cook it with a little olive oil and canola oil and cook it over medium heat and cover it to help get the temp up in the middle. When it reaches temp, you can do whatever you want with it.
I sometime marinate the chicken in either Italian dressing or a mixture of olive oil, garlic & Montreal steak seasoning... depending on what I'm using it for. Though you can use other ingredients based on what you are making...

I use the microwave for making cooked chicken meat for a recipe cuz it really doesn't matter if it browns - you only want the cooked meat. I put the pieces in a casserole a few at a time depending on what I need. Then I put a tbsp or two of water in the bottom, put a lid on and microwave for five minutes or so depending on your microwave. The meat comes out really moist, especially breast which can dry out quickly. You may have to do this a few times depending on how much meat you need but it's so fast who cares.

Put in a deep skillet or dutch oven, pour in 2 cups water (and any desired seasonings), cover & simmer til done.

Yes, you can bake it--use the above method and bake at 350 for a half hour.

If you're going to shred it, and use other ingedients later, you can just parboil it, 20 minutes ought to do it. Put some water and your chicken in a pan, bring it to a boil, and simmer for 20 minutes.
