Some still observed the Pesach sacrifice. The history is rather complex. Here are two good sites to learn about the Jews in Babylonian exile.

edit..inat was typing the same link as I was at the same time..twilight zone moment. However, I disagree that all sacrifice was performed at the Temple. The Karaites, mentioned in the article she gives as reference, performed the paschal lamb sacrifice in Babylon.
The Karaites do not now perform the Passover sacrifice as told in this FAQ page. http://www.karaite-korner.org/karaite_faq.shtml
EDIT to those who still insist no sacrifice took place outside of the Temple system. If you had read the links I provided, you would have seen the story is more complex than..no sacrifices without the Temple. Until Solomon built the Temple and for a long time AFTER...there were priests who offered sacrifices ELSEWHERE..and a FEW continued and resumed this after the FIRST exile and a very small number continued the practice..here is a non-Jewish "objective" analysis that I think actually lays out the history and story quite well showing the divisions and how the consensus developed for prayer to replace sacrifice in the absence of the Temple.
If one reads the Tanakh it is evident that there was argument and debate over the sacrificial system within its pages. PLEASE read here:
http://www.straightdope.com/mailbag/msacrifice.html
Call me a heretic if you want..but IMHO..I think those prophets who said animal sacrifice is inferior to prayer and repentence..had it right all along. Shalom :)

Until the Rabbinic Era (i.e. Roman Exile) we only sacraficed in the Temple. In fact, we have to date never sacraficed anywhere else although sacrafice was used as an analogy by Talmudic sages to discuss the introduced concept of "Tzedakah" (Charity).
Today we sacrafice by giving alms to the needy in both person and cause.
I should add that this would probably not have been codified had the 3d Temple been finished in the Byzantium Era. As it is, Tzedakah which had begun gaining currency was throughly assimilated into the foundations of our faith and culture, after the burning of the 3rd Temple (then under construction).

As the Jews were required to most sacrifices (the Passover Lamb being an exception), they were unable to offer those sacrifices while in Babylon.
You can also find a lot of details about the time of the exile in Daniel (which takes place during the exile) and in the latter parts of Ezekiel and Isaiah.

No.
Sacrifices were only offered at the Temple in Jerusalem.
This is an excellent article on the Babylonian exile:

No, they couldn't make any offerings in Babylon since they had no Temple there.
