will not marinate filet migon because he says the better the cut of meat, the less marinating it requires. I think all meat, no matter what grade, quality etc... should marinate. Am I right?

When it comes to meat, men usually know best. However, your question involves a matter of taste.

Men usually like the taste of the meat - which is why most men like their steaks rare (or at least medium rare).
Women usually like their steaks on the medium well to the well done side of the spectrum.

To compromise, just split the meat and marinate your portion, and then don't marinate his portion. The great thing about this compromise is that you both get to have your meat the way you like it, AND you have the chance to try a piece from your mate's plate and see if you like how his turned out, as well.

I personally don't like marinating most meats. A filet has a very light flavor, so I wouldn't marinate it, I would serve it with a zip sauce.
As far as the lamb, it has a strong flavor and lends itself to a marinade. I use a fresh garlic, olive oil & Montreal seasoning marinade.

Marinades are typically used on tougher cuts of meat to break it down and make it more tender. A filet cut does not need marinade for this purpose.

However, a marinade can add flavor to the meat, but if you do it to a filet, about an hour should be long enough.

When you buy meat from Omaha Steaks, a very high priced mail-order purveyor of choice grade meats, the package they FED EX to you in a dry-iced container includes marinades as per the recipe book they include. That Omaha company lives by the reputation of their meat and still recommends marinades (including for their filet mignon).

I guess that is a vote for your viewpoint.

to tenderize
OR to flavor
OR both

Personally, i would not marinate a great filet mignon.

He is right, the more you pay, odds are the better flavor its going to have. Just try it out, or cut it in half and marinate your half.

marinating is adding distinct flavor to the meat, which is good. however, if you have good quality meat, better to keep it simple, so you can enjoy its quality.

I wouldn't marinate fillet either All that money for prime beef...I believe you are not right.
