I make these cool mashed potatoes. Use the small red ones and leave the skins on. Boil until soft. Instead of the usual milk and butter, use cream of celery soup and sour cream. My kids devour them!!!

Since ham is salty, I like to have something sweet with it. Instead of a regular lettuce salad, switch it up with a fruity coleslaw made with Napa cabbage instead of tough ol' cabbage, buy a fresh, ripe pineapple and cut into bitesize pieces, wash leaves of the cabbage and dry and pile on top of one another and slice like shredded cabbage. Toss cabbage, pineapple and raisins with dressing, either homemade or store bought. Homemade dressing which is delicious and I like better than store bought and it's just mayo, sugar and vinegar to your taste. This coleslaw can also be made with canned pineapple chunks. I also like potatoes au gratin with ham. I found a crockpot recipe that I have tried and loved.

Au gratin potatoes slow cooker Perfectly done, tastes great

5.5. Hours start to finish
Makes 9 x 13 pan

6 medium potatoes, peeled, sliced
1 med. Onion, coarsely chopped
5-6 oz cheddar cheese, shredded
1 can cream of celery or mushroom Soup
½ cup milk
¼ teaspoon thyme leaves or
Garlic and parsley

In slow cooker, layer ½ the potatoes, onion and cheese; repeat layers. In small bowl, combine soup, milk and spices. Pour this mixture over potatoes.
Cover and cook on high 3.5 hours.
Turn to low for 1.5 hours.
Spray 9/13 pan and put potatoes in it. Sprinkle more cheddar cheese over top and cook 350 til browned, about 20-25 minutes or just broil until cheese is melted and beginning to brown.

I'll second the suggestion for stewed apples, adding raisins is good too. I also like stewed prunes with a ham (they're nice and sweet & cut the salty taste you can get from ham) but not everyone does.

Scalloped potatoes with cheese goes good, also lima beans.

My fav. ham accessory is mashed potatoes with a wonderful gravy. I buy a can of pineapple chunks, drain the juice into a small pan. heat on med/low. Add some brown sugar & stir till the sugar is melted. (I also add some ground clove to it here just for taste) Then add a tsp. of flour to a little bit of water & make a slight paste. Add to mixture of juice & sugar. Stir with whisk to thicken & make it more like gravy. Add pineapple chunks to it, heat on low till pineapple is warmed (about 3 min.) Then pour it over potatoes & ham!! Its a family fav. here with the kids as well as me & hubby!!! Let me know what you think if you do try it. You know how to reach me! ~Me

Mashed sweet potatoes are yummy. Corn casserole or green bean casserole. I always like homemade coleslaw with ham too.

my fav with ham is mashed potatoes with brown gravy. I also adore fried apples with it. Yum Some corn and fresh baked rolls would round it out (another veggie would be good too).

A good potato recipe...like....
seasoned roasted potatoes...
cut up potatoes into cubes, then place in a big ziploc bag, drizzle with olive oil, then shake shake shake(completly cover the potatoes in olive)....empty the potatoes onto a cookie sheet (with edges) then sprinkle rosemary, thyme, garlic salt, pepper, and any other spices you like.....then bake till done.
