Probably out training...and that's more likely if you live out in the sticks and not in a highly populated area.
The formation you describe is "trail", and it's the usual formation for a flight of Chinooks.
And what you're calling a "needle" is actually called a refueling probe.

There is a 'canine and equestrian exhibition' (dog and pony show) going on in an (IMO futile) attempt to teach public officials how to interface with the military in a large-scale emergency.
Apparently the whole affair has turned into one big room with lots of high-tech displays and screens for the politicians and their handlers and hidden away in the back of the building is a small command post set up where the people who really do the work can operate uninterrupted.

You do have an Air Guard base near there. Part of the old Mather Air Base is now run by the California Guard.

Seems to be a lot of weird stuff going on with military helicopters lately. About a month ago, an Army reserve helicopter was literally circling my house/property for almost an hour. We are nowhere near an airfield or base either, and we are in a fairly residential area. This chopper was so low at one point that I thought it would land in our back field. I called the police to see if there was an escaped convict or something; of course, they just laughed it off and said it was training maneuvers. Yeah, training to snipe civilians' houses?

They are helicopters, they fly, its called follow the leader, just because they flew over your house big deal! They don't require your permission, which if you were anyway connected to the name you use in the your avatar you would know that.

Same thing hapened to be a few days ago! But I'm in Massachusetts... It's really odd. I haven't heard anything about it. Actually, there were more than 3 and they weren't in a straight line.
