I'd stuff all veggy's inside the hen and bake, then i'd remove them to serve... adds taste to bird and creates a side dish maybe top the veggy's with mozzerella to add to too look and flavor of veggys(cut up veggy's first) wrap the veggy's in foil before puttin in bird. maybe a side of bread..

You could season and braise the hen till tender and pulls away from the bone easily, cool and remove from the bone. Dice the peppers, onions and garlic, saute in olive oil with seasoning for a couple of minutes and add the chicken. Slice and cook the carrots separately, toss with olive oil and fresh basil (if available) and/or season. Slice the tomatoes and spoon the hen mixture over the tomatoes, top with cheese and melt. Plate the gratin and spoon the carrots around the edges.

I think I would try and stuff some of the peppers,onions,and garlic under and inside the hen to add flavor then bake it with the carrots and tomatoes.If it were me I would just throw it all in my dish and bake it and just make sure i basted my hen so it got the flavors.

HUNGARIAN CHICKEN SOUP
1 fat hen, disjointed (5 lbs.)
About 3 to 4 qts. water
4 carrots, whole
1 parsley root and greens
1 onion
Wedge of cabbage
1/2 green pepper
2 or 3 pieces celery
1 sm. tomato when in season
1 kohlrabi when in season
2 tbsp. salt
1 tbsp. whole black pepper
Cook chicken in water; skim top very carefully when starting to boil. Skim 2 or 3 times to make clear soup. Add all the vegetables, salt and pepper. Cook under low flame until chicken is tender. Strain and serve with homemade noodles or store bought or liver dumplings.

Cut up all the veg and put it in a large roasting tin with the hen, cut up the garlic finley and add olive oil, then drizzle the gralicy oil over the veg and bird, and roast for a few hours. Its a filling dish and is a wonderful winter warmer!

i would make a home made salsa useing the peppers, onions, and tomatos. then put it over the hen(use spices on hen) and bake. i'd not use the carrots for anything. after hen is done add the cheese and let melt over the salsa and hen. then put the hen and salsa over rice.

I would remove the back bone( split open) large dice the veggiesput them inside the chick close and skewer, the roast or high heat grill.
