I think they would taste the same but would be flat and really hard.

They will be flat. They will probably still taste fine but be sure to watch them as they spread across your cookie sheet. You don't want them to burn.

I did this once when I was a kid. A huge batch.
They came out flat like peanut brittle, horrible!

They may not rise right and might be brittle. Don't think the flavor will be affected that much.
