my bf loves rice (weird, but, whatever)
anyone feel like shooting out a quick recipe?

Easy Fried Rice

Ingredients:
2 cups cooked Rice
2 Tbsp. Vegetable Oil
1 Tsp. Sesame Oil
1/2 cup sliced green onions or scallions
2 eggs, scrambled and cooked
1/4 cup soy sauce

Directions:
Cook Rice according to package directions, then let cool
Heat oils in wok or large skillet.
Add rice and stir fry for 4 minutes.
Add green onion and scrambled egg. Stir fry 2 minutes.
Add soy sauce, stir fry an additonal 2 minutes. Serve

This is my favorite. It's Curried Basmati Rice.

Saute some garlic and ginger in some olive oil in a saucepan. Add 1 cup basmati rice and stir well to coat for a couple minutes. Add 1 Tbsp curry powder and stir well until coated for a couple more minutes. Add 2 cups chicken broth, bring to a boil, reduce to a simmer, slap a lid on it and time for 20 minutes. That's just the basic recipe.

About halfway through I like to add a handful of frozen peas, some baby shrimp, chopped green onion and chopped cilantro. Cover and finish cooking.

Super easy and insanely good.

I boil the rice, dice and fry an onion in a little olive oil and about a teaspoon of garlic puree. Mix the fried onion into the rice and hey presto. You can then put the rice in the pan/wok and throw in a whisked egg, then cook it for about 7-8 mins. Simple and delicious.

Italian Beans and Rice


*

2 tablespoons olive oil
* 1 tablespoon minced garlic
* 1 medium onion, chopped
* 2 stalks celery, chopped
* 1 dash hot pepper flakes, or to taste
* 15 ounce can chopped tomatoes
* 3 cups cooked (1 cup dry) white beans like great northern or navy beans (2 - 15 ounce cans of beans will make 3 cups)
* 1 tablespoon dry parsley
* 1/2 to 1 teaspoon basil (optional)
* Cooked brown rice

Put your rice on to cook before you begin this recipe. I use 1-1/2 cups of brown rice and 3 cups of water. For the beans I cook a cup of them earlier in the day, so they are plenty tender by suppertime.

Begin by chopping your onion and celery. Heat the oil in a 3 quart pot. Add the garlic, onion, celery and hot pepper flakes. Sautè until the onion is tender and fragrant and the celery is bright green. Add the undrained tomatoes and 3 juicy cups of cooked beans. Stir it all up. Add the parsley and the basil if you are using it. Bring to a boil, reduce the heat and simmer for about 10 minutes. Serve over the brown rice.

If your beans weren't salted and if you use no-salt-added tomatoes, you will need 1 teaspoon of salt for this dish. Otherwise, salt to taste. If the tomatoes and beans are both already salted, you probably won't need to add any additional salt.

Makes 6 servings. Sprinkle with parmesan cheese and extra hot pepper flakes at the table.

I love Mexican Rice!

Saute 1 cup of rice in a tablespoon of olive oil for a few minutes, then add 2 cups of water and 1 chicken bouillion cube and 2 tablespoons of tomato paste and simmer for 15 minutes, then add 1/2 cup of frozen veggies, like corn and green beans and simmer for 3-6 more minutes. Stir to fluff and serve with beans and tortillas.

Chicken fried rice. I like to make it this way on occation but switch it around depends on my cravings for oriental food. This is how a sometimes make it:
Steamed rice, diced pre cooked chicken breast, cut bacon, scrambeled eggs, diced celery, diced onions, diced green pepper, diced carrots, cut up small shreds of nappa cabbage or regular cabbage, saute` or pan fry in sesame oil or peanut oil or evn the bacon fat. sprinkle a little soy sauce over them and toss in with the steamed rice. Enjoy

Other people does it different and it depends on different cultures too.

pourage ( arros caldo) - water, stick rice, salt. chicken, ginger, onion leaves, garlic
wash the stick rice, let it boil until the rice is cook then put some salt for taste. for chicken: oil, stir ginger, garlic then chicken until the chicken is cook then pour it into the stick rice, let it boil then when cook you can put some onion leaves. optional: you can also egg or any stir fry food that you have eaten before.
stick rice with mangoes puree - stick rice, coconut milk, sugar,ripe mangoes optional: any puree desired applicable
in a skillet wash the stick rice with water. then drain water replace with coconut milk let it boil, stir continuously until its cook. puree - peal the mangoes divided then - use a mixer in making puree then the some of the mangoes can be use as garnish for the dessert.
California maki - nori, sugar, vinegar, sake( if you dont have one its okey), articifial crab stick, mangoes, wasabi, cucumber.

Creamy Rice, Chicken, & Spinach Dinner

1/4 cup KRAFT Roasted Red Pepper Italian with Parmesan Dressing
1 lb. boneless skinless chicken breasts, cut into thick strips
1-1/2 cups fat-free reduced-sodium chicken broth
2 cups instant brown rice, uncooked
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, 1/3 Less Fat than Cream Cheese, cubed
1 pkg. (8 oz.) baby or torn spinach leaves (8 cups packed leaves)
1 cup chopped tomatoes (about 1 large)
2 Tbsp. KRAFT 100% Grated Parmesan Cheese



HEAT dressing in large deep skillet on medium-high heat. Add chicken; cook 3 min. Add broth; bring to boil. Stir in rice; return to boil. Cover. Reduce heat to medium; simmer 5 min.
STIR Neufchatel cheese into rice mixture until melted. Add spinach (skillet will be full); cover. Cook 1 min. or until spinach is wilted. Stir rice mixture gently to mix in spinach. Cover.
REMOVE from heat; let stand 5 min. Stir in tomatoes; sprinkle with Parmesan cheese.
