There are several recipes that come to mind, but here is a favorite:

2 boneless, skinless chicken breasts, seasoned with kosher salt, fresh ground pepper and sprinkled with thyme.
1 cup fresh bread crumbs (small cubes are preferred)
1/4 cup crumbled feta with herbs
2 T parsley
1/2 cup chopped artichoke hearts (save the liquid)
2 T butter, melted
1/2 cup white wine
1 tsp dijon mustard
1 T thyme (fresh preferred)

Make a pocket in your seasoned breasts while you heat 3 T olive oil in a skillet. Mix the next 5 ingrediants and divide between the two breasts, stuffing in as much as you can into each pocket. Saute in hot skillet until browned on both sides. Place in baking dish. In skillet, deglaze with wine. Add mustard and 1/2 cup of the reserved artichoke liquid. Add Thyme. Stir until slightly thickened and spoon some over the top of the breasts. Cover and bake at 350 degrees for 40 minutes. Serve with wild rice pilaf, the rest of the sauce, and fresh green beans.
