I definitely think your theme and everything really matters here. Give us some details--colors, flowers, anything would help. As one poster said putting lemons in a vase and filling it with water looks great. Leave some whole and slice some in half.
Be creative! You can mix feathers in with the flowers. Do you want it to be tall or flat? The floating candles and/or floating a big flower (hydrangea or sunflower) looks great and allows people to see each other if its a seated dinner...BUT it doesn't give you that BAM factor when you walk into the room.
I did really tall vases with multicolor glads that I ordered from Sam's Club. I arranged them myself. Though on the buffet tables I used the really large palm leaves. A friend cut open a pineapple and hollowed out the inside and filled it with flower petals. But yellow was one of her colors. Another friend is doing the same idea as a jackolantern but using different gords. She's carving Love, Faith, Hope, and other wedding words into it and putting candle inside the veggies.
One thing I saw recently that I thought was GORGEOUS was using sticks in a tall vase. Wrapped with Christmas lights. The sticks come out of the vase and arch like a tree as if it was growing. It was really pretty and August you could be going with fall colors or summer colors. If you are using fall colors, brown twigs go nicely.
Also if your colors are Apple-ish (red or green) and you have a talent for peeling an apple in one piece, using those peels on the table (instead of rocks) give an added burst of color and great smell.
My cousin is thinking about wrapping cinnamon sticks in a tight lil bundle and putting them on a candle stand like this

Her colors are 2 shades of brown though--a dark brown and a lighter latte color. You could easily have a 3 candle stand and put candles on 2 of them.
Of course you can always do a simple wreath type of thing like people do at christmas but use your flowers instead. A big fat candle with flowers like this

I mean it really depends on a bunch of factors. If your room is really tall you might want to do something with a lot of height to it. I've always liked the voltive trees for centerpieces but that can get quite pricey if you have 20 tables. How large are the tables? Rectangle tables you want to have a narrow centerpiece so its not taking up the whole place. My tables were really large so I ended up adding 5 votive candles and river rocks to the table around my centerpiece.
I like the big brandy sniffers--those huge glasses--the sell at Walmart and Michael's. Fill that up with your wedding color.

I saw on tv someone did gumball machines in the center of each table. It was very cute. Or Disney brides find a lot on ebay of 100 castle candle toppers or frogs wearing a crown with a sign "Happily Ever After". You can get a lot of those of like 50 or 100--which is far more than you need. Take out the 20 you want, and resell a lot of 80.
Is it a day wedding? Night wedding? Formal? Casual? Do you want height? Are your colors a neutral palette (so you'd need a more impressive centerpiece to jump) or something bright and bold (in which case may want a smaller centerpiece to not be overbearing). If you use live plants you can always plant them in your yard afterwards.
Also one good thing if you are tight with money--ask around at your church about the names of any of the recent brides. Often a bride now has 20 tall vases that she is stuck with that she'd be willing to sell for a fraction of the store price. Or river rocks and votives.
Look on yahoo and google images for wedding centerpieces and see if you are inspired by any of those. Cut out pictures of your flowers in magazines. Then you can play with it--since it will look completely different. If you are doing individual desserts (instead of traditional cake) you can arrange them as your centerpiece.
I hope these ideas give you some help. But really without knowing anything about you or your particular style of wedding--the options are far far wider than just flowers in a vase.

Float flowers and candels in a shallow bowl.
Tall small flower pots with 4 -5 flowers, no stem showing.
Pinecones, leaves at the base of a candle stick. Remember, nothing to tall, your guests need to see each other from across the table.

My colors were black and red and I was on a budget so I went to Ikea (hopefuly there is one within driving distance from you) I got nice vases (about 10" tall by 6" diameter) for $2 a piece, these really cool square mirrors that had a red frame for $2 ea., glass votive holdes for $0.50 ea (2 per table), some bags of black river rock (pick 'n' save $1 ea), and I put 3-5 stems of red gerbera daisies in each vase, no filler. You could easily change the colors and type of flower. The simplicity was great and I was able to do it myself. On the cake and food tables I replaced the flowers with floating candles in the same vases. You could alternate between flower stems and floating candles and it would be really nice.

Ditch the balloons, they make it feel like a birthday party not an elegant event. You could do petals on the table with votives in different sizes on top of a mirror (check with your location on their candle/flame specifications, but they have flameless candles as well). Or a large vase with a ribbon around the top with a single flower is a very understated and pretty centerpiece. You don't have to do favors if you want to save money. They are becoming less and less the norm as most people don't take them or throw them away. If you want them though try to stick with food items or candy.

At a bridal expo recently, I saw these beautiful, but simple, centerpieces that I'm thinking of changing my design to. They were tall, clear vases filled about 2/3 of the way with fruit (some vases had whole fruit--cherries, small limes--and others had thick slices of oranges and lemons), then filled with water with a floating candle on top. There were three varied length candles around the base, with some flower petals scattered around the table. They were strikingly elegant, easy to do, and inexpensive.

I am getting married next August too! My friend, for her wedding, bought some glass candle holders from Asda and a big bag of the tiny white candles and placed a couple on each table. Then she got some leather candle holders, which hold four candles, for the top table. It may be worth trying if you think it will look nice. Congrats. x

Try getting some slender tall vases fill with clear glass stones, then look on line for floral lights, they come in all colors you light them and drop them into the bottom of the vase so it is lighted then use long stem flowers of your choice to put in the vase. The effect is great, it is more safe then candles and it is new and fresh not something everyone has done.

A friend of mine went to the dollar store and bought flower vases, put river rocks in the bottom, water, and floated little candles. Around them she had a viney flower decore going down the table.

Here's what we plan on having, maybe it can give you an idea. We're having cylinder vases filled with water and a few orchids with a floating candle on top. Then on the table around the vase we're going to have a few scattered orchids and a couple of candles. Nice and simple. It's not going to be too costly for us.

find a flower warehouse open to the public where you can buy large packs of round/square oasis look around bouquets of small coloured roses of around 12/20 for around 99p plus vat cut stems short cover oasis with flowers leaving small circle in centre in which you can place candle or small weight with a balloon attached take 3 inches of contrasting ribbon fold in half cellotape to the cut off stems of the flowers then stick at least 5 between flowers so that ribbons are showing above flowers looks stunning costs less than £2.00 per table

We found some hurricane glasses for like 5 bucks each that were really pretty and we have metallic gold candles for them. They'll probably sit on mirrors. Those are going in the center... Maybe with some of those glass gems in the bottom. We are running strands of ivy and strings of pearls down the table with some hydrangea interspersed (our tables are longish).
