Could you give a percentage of one over the other?

I assume you mean high definition sound. See the links for info on the two formats.

Both are multichannel formats and both are superior to normal CDs. Which is -- in theory --"higher definition" can be debated (I'll be honest and say to my ear the best of each format sounds darn good), BUT in practical terms many DVD-A recordings (and probably SACD recordings too) fail to meet the potential of the format, so which is higher fidelity in fact rather than theory is a more valid question. I have a fair number of both types and frankly I can't say one is better than the other from a sound quality perspective (although both are, to my ear, better than normal CDs).

For many the multichannel format of SACD or DVD-A is a bigger and more obvious benefit than improved fidelity over CD. Put simply, many listeners don't have equipment (and arguably the "ear") to appreciate the superior sound.

For whatever reason both formats are pretty much a non-player today. DVD-video is arguably the more successful multichannel format ... possibly due to the presence of both audio and video. Then again, most consumers are quite happy with MP3s .... so fidelity is clearly less important than convenience.

Neither of these is a video format - they are sound only, so 'definition' is not really relevant.

Since both formats never really took off, it's a bit difficult to compare. Some people feel that DVD-A is better, some people say they prefer SA-CD.
