DON'T put it in the fridge. Cheryl Mendelsson in "Home Comforts" says that keeping bread at 40 degrees F makes it go stale faster. You can keep it in the freezer for three months. But if you leave it on the counter, you need to eat it within two or three days, depending on your climate.

You could leave out four or five slices (per person), and freeze the rest. Then pull it out the night before you need it. It'll be thawed and fairly fresh then.

I think bread boxes only work to keep the rats and bugs out.

most breads these days are loaded with preservatives that help them last till the cows come home- usually 1 1/2 weeks. For your usual run of the mill white sliced bread, i take it straight out of the bag and into a clear plastic bag, empty out all the air and put it someplace NOT in a dark cupboard. That seems to work for me- and you put off the moulding for a while longer than usual. I also freeze a loaf sometimes, and toast it straight from the freezer- that's pretty good too.

I keep mine is a tightly sealed plastic bag on the counter. If you put it in the fridge then the cold can create moisture on the inside of the bag that can turn the bread quicker. Either keep it room temp for a week or so, or freeze it. Either way, a tightly sealed plastic bag if your best bet.
