Gesso which is used on todays canvas is acrylic gesso, and it is pretty much cheap acrylic paint with additives to give it some tooth or with added colors. It is used to prime canvas. It can be used for oil or acrylic painting.
Linseed Oil is oil derived from seeds of a plant and is used to suspend pigment. Linseed oil is used for oil painting not acrylic. It binds the pigment so it is fluid, and can be applied to canvas or other support.

Gesso is a mixture of (basically) chalk and glue. You use it to prime your canvas or any other surface you want to paint on. It ensures your have an optimal painting surface.

Linseed oil is a medium. It is what holds the pigment in place. It is an oil that will harden and hence the paint can dry. It is" the oil in oilpaint". (there are more types of oil even synthetic but this is the original, most famous oil)

Linseed oil's a medium for thinning your paint... making it more transparent, easier to work with, etc... Gesso's for priming your canvas.
