when i roast a chicken i cut it in half (not whole) and i put it in a roasting pan...with lil water and really really lil of oil and onions...(the chicken was already seasoned....and then i add potatoes....how long should i roast the chicken and at what temp??? and when should i add the potatoes?

If you are cutting your chicken in half and placing the halves side by side, your cooking time will be less, especially if you cover it with foil.

2.5-3.0 lbs.= roast for 1.5 hours at 375--on a rack in a roasting pan.

A large roasting chicken-5-6 lbs. will cook in approximately
2 hours if it is butterflied.

If you cut the potatoes into quarters, they should only need to cook in the liquid for about 30 minutes. If you want to cook them whole, cook them on high for 5 minutes in your microwave and then put them in with the chicken for the last 25 minutes.

It really depends on how big the chicken is. Really big, then quarter it. You can add the vegetables at the same time if they aren't cut too small. Cook the chicken until the juices run clear, around the thigh area. Use chicken stock in the pan instead of water, it will make a better sauce/gravy.

Roast @ 350 for about 2 & 1/2 to 3 hrs......Add potaoes, celery & carrots the last hour.....If you like mushrooms, add the last 30 - 40 minutes...( Add a few pats of butter when potatoes are added)......Yummy!
