I usually just make a plain apple crisp until I found this recipe and fell in love with the taste and especially in fall!
Apple Cranberry Crisp
5 cups thinly-sliced peeled apples
1 cup cranberries
2 tablespoons granulated sugar
1/2 cup quick-cooking rolled oats
1/3 cup packed brown sugar
3 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
2 tablespoons margarine
1/2 cup vanilla or lemon nonfat yogurt
Directions
1. In a large mixing bowl combine apples, cranberries, and granulated sugar. Transfer to a 2-quart square baking dish or a 9-inch pie plate.
2. In a small bowl combine oats, brown sugar, flour, and cinnamon. Cut in margarine until crumbly. Sprinkle oat mixture evenly over apple mixture.
3. Bake in a 375 degree F oven for 30 to 35 minutes or until apples are tender. Serve warm with a dollop of vanilla or lemon yogurt. Makes 6 servings.

While the crisp portion is fairly simple, but as a former chef, I tended to use a variety of apples, and with them now in season a selection is alot more possible.
True, Granny Smith are nice and tart and hold up in cooking but an Ida Red, MacIntosh and a Gala give you the sweetness that does not need alot of sugar, a Russet or Golden Delicous breakdown and give the base some body.
I generally use at least 8-12 apples, I like the oatmeal, flour, brown sugar and butter/margarine crumb top, a dash of cinnimon or nutmeg goes well in both top and bottom, I serve mine with a lightly whiiped cream flavoured with maple syrup or a good old fashion french vanilla ice cream is always a favorite too.

APPLE & BLACKBERRY NUT CRUMBLE: (serves 4)
Pre-heat oven to 350F, lightly butter a 2 pint oven dish.
Peel, core, & slice 2 lbs cooking apples, place in saucepan with 2 tbsp butter, 2 tbsp brown sugar, 1 tbsp water.
Cover tightly & cook gently for 10 minutes, until tender.
Remove from heat & add 1/2 cup blackberries.
Stir & spoon mixture into ovenproof dish, set aside.
TOPPING:
Sift 1/4 cup whole wheat flour, 1/4 cup plain flour, &
1/2 tsp cinnamon, into bowl.
Add 6 tbsp butter & rub into flour or use food processor.
Stir in 1/4 cup brown sugar & 3 tbsp mixed chopped nuts.
Mix well & sprinkle over the fruit.
Bake 35-40 minutes, until top is golden brown.
Serve hot with ice-cream, (or custard).

Old-Fashioned Apple Crisp
5 pounds McIntosh or Macoun apples
Grated zest of 1 orange
Grated zest of 1 lemon
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
For the topping:
1 1/2 cups flour
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
1/2 teaspoon kosher salt
1 cup oatmeal
1/2 pound cold unsalted butter, diced
Preheat the oven to 350 degrees F. Butter a 9 by 14 by 2-inch oval baking dish.
Peel, core, and cut the apples into large wedges. Combine the apples with the zests, juices, sugar, and spices. Pour into the dish.
To make the topping, combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until the mixture is crumbly and the butter is the size of peas. Scatter evenly over the apples.
Place the crisp on a sheet pan and bake for 1 hour until the top is brown and the apples are bubbly. Serve warm.
TWICE BAKED CARAMEL APPLE CRISP
7 to 8 tart green apples (peeled, cored, sliced into 1/4" strips)
1 cup sugar
1 1/3 cup packed brown sugar
1 cup all-purpose flour
1 cup quick cooking oats
2/3 cup melted unsalted butter
1 1/2 tablespoon ground cinnamon
1 tablespoon ground nutmeg
1 teaspoon ground ginger
10 oz caramel sauce (preferably from starbucks)
vanilla ice cream
Preheat oven to 375 degrees F.
Spray one 9 x 13 x 2 and one 8 x 8 x 2 pan with non-stick cooking spray.
Arrange half apples in 9 x 13 and other half in 8 x 8. Sprinkle each with 1/2 cup sugar.
Mix together brown sugar, flour, oats, cinnamon, nutmeg, ginger and butter. Stir until well moistened. Sprinkle half this mixture over 9 x 13 apples. Top oat mixture with 1/4 to 1/2 cup caramel.
Bake both pans for 15 to 20 minutes.
Remove from oven.
Arrange apples in 8 x 8 over apples in 9 x 13 (this makes a second layer). Top with remaining oats and another 1/4 to 1/2 cup of caramel. Bake an additional 15 to 20 minutes or till apples are tender and top is crisp. Remove, let sit till warm. Serve with vanilla ice cream and additional caramel sauce on top.

PREPARATION:

2. Mix apples with 1/2 cup sugar, lemon juice, cloves and cinnamon.
3. In a separate bowl, mix together 1/2 cup sugar, flour and margarine.
4. Pour the apple mixture into a pie plate. Top with the flour mixture.
5. Bake at 350 degrees Fahrenheit for 45 minutes.

I like to use slivered almonds in my topping and either dried cranberries or raisins mixed in with the apples. Always use real butter!
