turn your oven temperature selector until the light just comes on (the lowest setting possible) and dry on a rack in the oven.

In the oven, prop the door open about 3 inches at the top. Drying time is about 8 to 10 hours, but can take twice that long for thicker pieces. Bending should splinter some of the outside fibers when done.

It should keep at room temperature for a couple of weeks, and will actually get better in a day or two as the moisture content becomes more uniform throughout.

It will take about 24 hours in an oven.

Turn the oven on to it's lowest temperature, place your meat in baking sheets, on racks and put into the oven.

Take a large piece of aluminum foil, roll it into a tube and place it between the oven door and the door frame to keep the door open.

The thing is, you don't want to cook the meat, you want to dehydrate it.

You will need to rotate the meat to different location periodically.

Off hand, I'd say you should use your dehydrator and forget the oven.

My dehydrator takes about 24 hours, but it doesn't heat the whole house.

The biggest thing you need is a big dose of patience.

Try using thinner meat. In the oven, you can cook it at a warmer temp and dry it out faster, but it doesn't turn out as well.
