Mushroom Cube Steaks
1 tablespoon all-purpose flour
1/4 teaspoon salt
Dash pepper
2 (4 ounce) cube steaks
2 tablespoons butter or margarine, divided
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce, divided
1/2 pound fresh mushrooms, sliced
1 tablespoon chopped onion
2 tablespoons minced fresh parsley
In a shallow bowl or resealable plastic bag, combine flour, salt and pepper. Add steaks; dredge or toss to coat. In a skillet over medium heat, brown steak in 1 tablespoon of butter. Remove the steaks; spread each with 1/2 teaspoon mustard. Pour 1/4 teaspoon Worcestershire sauce over each; keep warm.
In the same skillet, saute the mushrooms and onion in remaining butter until tender. Add parsley and remaining Worcestershire sauce. Return steaks to skillet; cover and simmer for 5-7 minutes or until meat is tender.

Chicken fried steak is the only thing I've made with cube steak. Whisk a couple of eggs, dip cube steaks in to coat, dredge in flour mixture (flour, salt, pepper), and if you want it extra crispy, dip in egg and flour mixture again. Add mashed potatoes and gravy for some real comfort food!

I'm a Brit - what is cube steak? Where on the animal does it come from? Is it the same as our braising steak, ie something which needs slow cooking?

Heat peanut oil in a cast iron skillet over medium. Mix 3/4 cup buttermilk with 1 pkg. dried ranch salad dressing/dip mix. Then mix 3/4 cup flour with 1 pkg. of ranch dressing/dip mix. Dip cube steaks in buttermilk mixture and then into flour mixture. Add to hot oil...flip when golden and remove when the other side is golden. These steaks cook very, very, fast. Not much time in the pan is needed. Serve with biscuits or cornbread...corn on the cob...brocolli...mashed potatoes...stewed tomatoes...whatever you like!
