Baked Ziti

8 ounces ziti
1 pound lean ground beef
1 onion, chopped
1 can mushrooms, drained
1 jar spaghetti sauce
2 cups shredded mozzarella cheese


Bring a large pot of lightly salted boil water to a boil. Cook ziti in boiling water for 8 to 10 minutes, or until al dente. Drain well.
Meanwhile, cook ground beef and chopped onions in a skillet over medium heat until browned.
In a large bowl, mix together the mushrooms, spaghetti sauce, shredded mozzarella cheese, pasta, and browned ground beef and onion mixture. Transfer to a greased, 9x13 inch casserole dish.
Bake at 325 for 20 min.

Either buy chicken cutlets or pound chicken breast thin. Shake them in a bag with flour, salt and pepper. Shake off any excess flour, you just want a light coating. Sautee this in a pan with olive oil on high heat just until the chicken slightly browns. They won't be cooked through, don't worry.

Take the chicken breasts out. Sautee up some shallots or red onions in the olive oil. Then add 1/2 c. each chicken stock and white wine. Add the chicken back to the pan and let it simmer for about 10 minutes. The liquid should become like a thin gravy. When it's almost ready squeeze the juice out of one lemon into it. If you have a few tbsp. of chopped capers. You can sub the white wine for marsala wine and add mushrooms to your shallots with another good effect.

Another really easy recipe takes a little bit of thinking, but it's easy still. Pick a certain amount of rice that you are going to cook. Then sautee up some onions and garlic in a sautee pan, next add your rice. Season well with S & P. Let this cook slightly. I prefer parboiled rice, but any will work. Then for your liquid mixture you need to mix at least 1 can of diced tomatoes, chicken stock and a splash of clam juice. Make it a three to one mixture instead of a 1.5 to 1 mixture. Once the rice is done add some shrimp, clams, chorizio, and/or firm white fish to the top and cover. Let this cook up. Once all the fish is done serve in the pan topped with some fresh parm. YUM!

Ingredients
ground beef
spaghetti pasta
tomato sauce

First brown the meat in a pan. Put your desirable seasonings and veggies in it. For example you could put in some onion, bell pepper, etc. Before you start browning your meat make sure you put some water in the pot to boil. If there is a lot of grease in the pan with the meat, drain it. Then add the tomato sauce. Add the desirable seasonings. Once you added the pasta to the water and let it cook until its done add all the stuff together. Let it cook for a while for the flavors to mix in. ENJOY!
on the side: salad, fruit, green beans, corn, etc!

For my lazy days, frozen tortellini or ravioli is my friend. In fact I'm making it tonight. Just boil the pasta, toss with a tub of pesto, and top with shredded Parmesan. While the water's boiling you can rip open a bag of greens for salad, and throw some garlic toast under the broiler.
