Obviously canned tuna is too loose to keep together to form a patty, so what should I add to it to help it keep its shape? I.E. flour, butter...and of course it still has to taste good :)

I use mashed potato to bind the tuna, also some seasoning but there are many versions. Here are a couple:

Tuna Patties
Two 6-oz cans water packed tuna, drained and flaked

3 egg whites

3 tablespoons seasoned dried bread crumbs

4 scallions, thinly sliced

2 tablespoons minced parsley

Black pepper to taste

In a medium bowl, combine the tuna, egg whites, bread crumbs, scallions/onions, parsley and pepper. Shape the mixture into 4 equal patties.

Spray a large nonstick skillet with nonstick cooking spray and preheat it. Add the patties and cook until golden brown and heated through (approximately 5 minutes on each side).

Makes 4 patties

Per Serving: 137 cal, 1g tot fat, 0g Sat Fat, 32mg Cholesterol, 462mg Sodium, 5g total Carb, 1g Fiber, 26g Protein, 24mg Calcium

Makes 4

Ingredients
425g can GREENSEAS Tuna in Brine, drained
1-1½ cups fresh breadcrumbs
2 spring onions, finely chopped
2 tbsps chopped fresh coriander
1 tbsp lemon juice
1 tsp finely chopped fresh chillies (or sambal oelek)
1 egg, lightly beaten
plain flour, for coating
oil, for frying
Method
Combine GREENSEAS Tuna, breadcrumbs, spring onions, coriander, lemon juice, chillies and egg in a bowl. Mix well.
Form into patties and lightly coat in flour.
Heat oil in a large frying pan and cook patties for 3-4 minutes on each side, or until golden. Drain on absorbent paper. Serve accompanied with a crisp garden salad.

Add 1 egg and either 1/4 cup of cracker crumbs or bread crumbs and some chopped celery or onion. Make into patties like yo would hamburger and cook. You can add grated cheese as well if you like.(don't forget the tuna has to be drained first)

About 10 Ritz crackers made into crumbs, 1 egg, mayo (2 tbs.), Worcestershire sauce (few dashes), salt, pepper, and maybe some hot sauce. Mix all together and refrigerate for 15 minutes. Form patties and either pan sear or grill. I like to use the rest of the sleeve of crackers to coat my patties and then pan fry them and eat them just like I would a crab cake sandwich.

TUNA FISH CAKES

2 cans tuna fish
1/2 onion, chopped
1/3 c. Italian bread crumbs
2 eggs

Mix all together real good. Form into thin cakes. Fry in oil on both sides. Use Heinz Seafood Cocktail Sauce on them.

2 c. canned salmon, tuna or mackerel
1 c. cold mashed potatoes
1/2 c. minced onion
2 tsp. lemon juice
2 eggs (beaten)
1/2 tsp. salt
1/2 tsp. pepper
1/2 c. all purpose flour
1/2 c. oil
Cocktail sauce (optional)

Combine first 7 ingredients, mix well. Shape into 8 patties. Dredge in flour, fry fish cakes in hot oil about 10 minutes or until brown, turn once. Drain well.

FLAVORFUL FISH CAKES

1/2 c. milk
1/2 c. onion, finely chopped
2 eggs, slightly beaten
1/2 tsp. salt
1 tsp. lemon juice
Parsley or water cress
1/2 c. Post Grapenut cereal
1 tbsp. shortening
2 cans tuna, drained & finely flaked
1/8 tsp. pepper
1 tbsp. shortening
Lemon wedges

Add cereal to milk; set aside. Meanwhile saute onions in shortening until tender, but not browned. Add to cereal mixture with tuna, eggs, salt, pepper and lemon juice. Stir to blend thoroughly. Form into 12 patties. Brown on both sides in remaining shortening. Garnish with parsley. Serve with lemon juice.

Try some bisquick,egg,diced onions,and seasoning.Then make a small flat patty and fry on med. heat.That would be good.or try a box of jiffy corn bread mix,make sure to drain the tuna and mix as you add water...

The usual favourite is bread-crumbs;
but you could try cornmeal or oatmeal instead.
Perhaps some raw egg as a binder, be sure to cook well.
You could also add some chopped green onion for flavour.
Maybe parsley & mayo for fancy versions.

Whenever I make tuna burgers, I use eggs & breadcrumbs as my binding agents. Usually, I use 2 eggs (beaten) and 1/2 cup of breadcrumbs for 12 oz. of tuna.

Combined with other ingredients (I use onion, garlic, capers, red pepper, lemon juice, & seasonings), they hold together pretty well.

Mexican tuna cakes= egg, bread crumbs,one can of cooked nopalitos you can find them at any supermarket my mother in law add a chipoltle pepper sauce a#1 didn't like nopales till i had her tuna cakes a definately good!!!

try add some flavored bread crumbs, 1 egg yolk not the whole egg, pepper, dash salt,, diced onion and bell pepper, form and fry in olive oil 3 mins on each side, or until brown..try that I have it turned out good for me
