I am 99% sure it's always been just "Pushing Daisies"

It has always been Pushing Daisies but you might have thought it was Pushing Up Daisies because that is how your brain has been conditioned to think. Our brains will usually replace missing words when we've seen or heard something so many times. This is also a tactic in Marketing.

You could be right, I remember ABC did that when they first came out with Ugly Betty, they were saying Betty the Ugly because they were translating it literally from Spanish then I guess somebody realized the error and changed it.
