my mom wants to take online cooking courses and asked for my help but i have no clue so any information is appreciated... if you know good websites please let me know

If she is looking for knowledge not necessarily a degree or certificate, I highly recommend the America's Test Kitchen website. There is also a magazine, a show (PBS here), and cook book. It looks at cooking from many angles from the gadgetry to the science to the art of it. They do product testing, compare the successes and failures of minor changes in a recipe, and, of course, they cook and show the recipes.

What sort of online cooking classes is she looking for? I don't have any recommendations...but I will tell you that I use the Fannie Farmer Cookbook as a starting point for most of my cooking...

Try all of your local community colleges. Most of them do offer cooking classes as non-credits.
