I have no clue what his last name is and he didn't give me his card. do I put Mr. Matt? I don't even know his last name. What is an elegant or professional way of writing his name?

Call the switchboard at the company you interviewed with, and tell them that you had an interview with a Matt somebody for such-and-such a position, and were wondering what his last name was so that you could send him a proper thank you. Make sure you get the spelling too, so that you don't misspell his name.

I had to do this last year in order to find out if I was addressing my application to a man or a woman - the name was unisex, and I didn't want to guess incorrectly!
