Same reason those people often are rude to the cashiers and servers on Sunday afternoons. They're not practicing what they learn at church. They're just going to church so others will see them there and know they're the "right" people to associate with. It's sad.
Also, some people just make mistakes. They have issues.

Because you're half starving by the time the service ends. Some church services are around 3-4 hours long. Also, having a meal together is usually a tradition. If these are American church goers, i'm not surprise at them eating the whole buffet. I mean, 15.99 can only take you so far is this crappy economy.

no kidding. every single sunday i make sure to get any grocery shopping, errands, etc...done before church gets out. the first job i ever had was at an IHOP and sundays were the absolute worst. the post-church crowd were always impatient, rude, bad tippers, and totally unable to wrap their brains around why their party of 15 got sat after the party of 2 that came in after them. at least if you work somewhere with a buffet, you don't have to worry about people sending their grits back because the image of the virgin they saw in the butter pat wasn't accurate.

From my own experience, I was a fitness fanatic prior to really surrendering to God. I basically worshipped 'my temple' and I was extremely prideful about my appearance. It was constantly reinforced by sin-in that I partied alot and was always trying to be the hottest one in the club, shortest skirt, longest legs... I used to would rather have a margarita than food. Sin, pride and lust are powerful motivations.
When I became a Christian, I had to put away those shallow 'motivations' and find another reason to be fit. I dont wear hoochie clothes anymore so Im not showcasing my body plus Im married and I dont want men ogling after me anyway. So, am I as adamant about having that 'coke bottle' figure? Not really. My focus has changed. Its hard to get up at 4:30AM to run 5 miles for Jesus(who isnt worried about how good I look in a pair of jeans)...and some people dont have 'fitness' as a foundation in their lives in the first place to 'RE-find the motivation'.
Long serious answer to a flippant question but oh well...

They are trying to take part in the Lord's bountiful offering all in one sitting. The meek may inherit the Earth, but they had better use their elbows or they will lose their place in line at the Old Country Buffet.

Because gluttony is not as big a sin as homosexuality, so they gather en masse and take out their massive man-lust on stacks of meat and cheese, meat and cheese (except for the women...they have femme-lust).
It's funny...every time I've just happened to be at a buffet on a Sunday morning, crowds of well-dressed, stern-faced gigantos punish my beloved buffet...
