(1) Don't eat like a pig... chose an interesting, healthy breakfast (but don't look like a little hen either... order meat, but try to make sure there's something healthy on your plate).
(2) Smile a lot.
(3) Remember that you're a catch, and you're interviewing her as much as she's interviewing you.
(4) Be polite. Pick up the check. Ask if she wants more coffee.
(5) Think about one or two things to ask about if the conversation stalls.
(6) Ask a lot of questions.
(7) Don't dawdle. It can be long for breakfast (~ 1 hour or more) but don't turn it into an all day affair. Show that you're interested, but that she'll need to see you again to get to know you.

cook that breakfast for her...but before that, find out what she loves for breakfast and prepare that for her. and since it's a 1st date, let the atmosphere be light and casual so you 2 can be yourselves, and in so doing, show off your true colors. afterwards, go play some sport like tennis or miniature golf.
