Because that would be considered a real, unquestionable miracle, something that this particular belief system is incapable of producing. It's easier to take something normal and claim it is extraordinary, like convincing a bunch of drunks that the dirty hand water they're drinking is actually a very fine wine, or walking across a sand bar and saying you're walking on water. Let's start with the two verses you paraphrase:
Genesis 1:27 So God created man in his own image,
in the image of God he created him;
male and female he created them.
Genesis 2:7 the LORD God formed the man [e] from the dust of the ground and breathed into his nostrils the breath of life, and the man became a living being.
While God could have created any other man/woman the same way, it was unnecessary.
Adam was not made out of clay/dirt, he was form out the dust from the ground [H6083 H4480 H127].
The key term is "in his own image". God is spirit so his own image is spirit. This means the discussion is spiritual not material.
Answer: If you want to change the bible, don't expect to understand its meaning.

God create first human being from Clay those were Adam and his wife after that Adam and his generation are generating his own generations.
Jesus mother was the member of the Jews tribe and Jews was consider themself superior to all so GOD create Jesus from without father and asked from jeses you told that your generation (fathers) is superior then told me who is the father of JESUS.
There is no father of JESUS his birth was a miracle and was a question for Jews.
GOD is ONE and clean and does not have and required a son.

because he wanted everyone to trust Jesus through faith and belief...if he would have made Jesus out of the dirt...of course everyone would follow him and beileve he's the son of God. You would be dumb not to believe he was supernatural if you saw him made from the ground. I also believe Jesus being born from Mary is a sign that showed he was perfectly God and perfectly Human...God did that on purpose to show that He came to this earth like we do and lived on this earth like we do. When he created Adam, there was noone around thus it didn't matter how Adam was created.

Good question and a good one to ask. But something you fail to realize God made even you. Conception is God plan for humankind. It is the way we reproduce. God could of made another human race or species to show His plan. But instead He desire us to have a Savior who walked the same way, talked the same way, and was born physically the same way we has humans do.
He gave us a Savior that had to grow up like we do. Experienced temptation like we do. He wanted us to know He understood the difficulties of this life. He desired to show us how to live. And in the process He also brought salavation to us through Christ death and resurrection. He had to experience death to overcome death. We can not overcome death unless we believe in Jesus. To be absent from the body is to be present with the Lord.

This was all to fulfill prophecy. God told the serpent in the garden that Eves seed would crush his head. He couldn't just be made from dirt he had to be born of a desendant of Eve. Mary was needed for her bloodline Joseph was needed for his name. Back then a baby out of wed lock Mary would have been stoned to death.

those who say Jesus (islam) came after Adam (islam) to destroy the sin that had happen are right but the sins are still there so another prophet had to come and who did come come and sorted that out. - God is great and does not need to explain himself to no one if he wanted Adam (islam) first so be it who are we to question and if Marry got married then the bad people of that time would have said shes lying and Jesus (islam) is the son of Joseph (pbuh)

Jesus always was.
"In the beginning was the WORD, and the WORD was with God, and the WORD WAS GOD." John 1:1
Because Jesus is not merely a human. He was fully God, and fully man. He wasn't created. He has always been.
GOD MADE HIMSELF MAN, AND CAME DOWN TO DIE ON THE CROSS FOR THE SINS OF THE WORLD.
God would not create Himself like He created man. Why would He?
