When I'm boiling potatoes I leave the skin on because it creates a barrier between the water and the flesh that I'm going to use, preventing the cells of the potato from filling up with water. Then I discard the peel leeving a fluffy steamed wonderful product.

If making baked potatoes, I leave the skin on but to prevent it from drying out.

I think it really depend on your cooking method and the actual pootato.

Waxy potatoes like Yukon Gold and Red, I usally don't peel, but I don't bake them either. I roast, boil, mash them. With Idaho/Russet potatoes, I peel them when making home fries, but when baking them, I leave the skin on through cooking and eating.

Depending on how I'm cooking it, if I boil it I take it off and if I bake it or grill it then I scrub it clean, and leave it on. Something about boiling it with the skin on just doesn't seem that hygenic to me.

I think that it's a personal preference. If you like the skin on your potatoes then keep it on there and if you don't take it off. Either way you can't really go wrong if you like potatos because I like it with the skin on or off.

Because the skin has most fo the fiber and nutrients, plus it tastes good too!

It cooks up better and the skins are tasty, especially if you rub them with olive oil and coat with black pepper.
