go to a local college bookstore...if they offer culinary arts there.....they have books what u need

There are two great links on this website. The first one has a ton of small cookbooks and the second one gives the recipe and technique for cooking each dish. I think they are the best links for cooking. Find them in the "Leap over Web Clutter" section at New Free Books.

I'll also say The Professional Chef, by the Culinary Institute of America. I have it, it's quite detailed. The only problem is that most of it's recipes are for large quantities, usually feeding 20 people, but it is a book to train people on becoming a chef, and goes over pretty much everything you need to know.

I always refer to my Fanny Farmer cookbook. I collect cookbook and I have several hundred,but the one that never fails me is Fanny Farmer she has a recipe for everything. I haven't found anything that wasn't really good when I was done.
I also like Paula Deans "Celebration" cookbook, it has alot of tasty recipes I am looking forward to cooking.
PS. My Fanny Farmer is duck taped together and always readily available, and I have given copies to all I love.

If you are looking for an actual cookbook, then I would highly recommend "The Joy of Cooking"

If you are looking for a source online, I would recommend http://www.allrecipes.com as they have some great demonstration videos, written instructions and an encyclopedia.

i bought 'Le Cordon Blue Complete Cooking Techniques' by Jeni Wright and Eric Treuille 1996.....from a charity shop recently. I read it daily. Best £2 i ever spent.

better homes and gardens!!! is by far, the best when starting out to cook. It is basic, covers the basics and has a ton of great recipes. I have had one and it was stolen. It is the best when learning how to cook.
