Italian Omelette
Ingredients
eggs
milk
fresh cut onion
fresh cut green pepper
tomato
mushrooms
mozzarella cheese
Whisk eggs together in a medium-sized bowl, adding in ingredients. Place in a skillet on medium heat until cooked and fold together, adding cheese inside the folds, so as not to burn onto skillet. Slide out of pan when fully cooked. You might try using Italian bread for toast. Simply slice your bread, butter with a little olive oil, and place in the oven until toasted.

That's a fritatta.
You start it on the stove top in the skillet until it sets but still runny then transfer to the oven to finish baking.
Basically, start it like an omelette with the ingredients you like such as pancetta, onions, red peppers, pepperoncini slices, black olives, tomatoes, mushrooms, asparagus, etc.
Add a little milk or half and half to the egg mix, season with salt/pepper, and cheese is an excellent addition.
You can start by sauteeing your meat, remove oil if necessary, add veggies and sweat out and then pour egg mix on top.

You need:
225g red onions, sliced very finely
45ml oil
3 eggs
30g fresh Parmesan cheese, grated
Salt and freshly ground black pepper
20g butter
Method:
Cook the onions slowly in the oil until reduced in quantity, soft, and a rich golden brown colour. Tip the onions into a sieve over a bowl.
Beat the eggs until lightly mixed. Mix all but 3 tablespoons of the eggs with the onions, cheese, salt and pepper. Mix well.
Melt the butter in a frying pan over a medium heat. When foaming, add the egg and onion mixture. Reduce the heat to very low.
Cook very slowly for 15 minutes. The eggs should be set and the surface runny. Pour over the reserved egg. Place under a hot grill until set but not brown. Loosen with a spatula and slide on to a round dish. Serve cut into wedges.
Wine Suggestion:
I recommend a chilled ‘Fino’ sherry from the drier side of the flavour spectrum. You could also try Amontillado (medium dry) or Oloroso (full bodied sweet). I think that all of these are perfect as an aperitif or with egg based dishes.
I also suggests a wine made from the Tempranillo grape. It’s a traditionally popular red from Spain though plantings are increasing in Australia. It exhibits flavours of black fruits with grippy tannins with a semi-dry soft finish.
If white wine is your thing, my choice is the Italian style of Pinot Grigio. He says it’s lovely and crisp with grassy green-pea neutral flavours.

It's called a Fritatta, they are yummy.
I don't know what she put in it, but here's a recipe that I love.
3 tbsp. white wine
1/2 cup whipping cream
12 eggs slightly beaten
salt and pepper to taste
1 lb. Sweet Italian of Hot Italian Sausage, cooked and sliced
1 cup jack cheese
1/2 cup chopped red onion
1/2 cup chopped green bell pepper
3 tbsp. olive oil
sweet red pepper relish
Combine wine, eggs, whip cream. Stir cream into eggs. Set aside. Place sausage, peppers, onions in skillet with olive oil and sauté till tender. Spray a baking dish with non-stick spray or oil lightly. Place egg mixture in pan and lay the sausage mixture evenly over top. Sprinkle with cheese and place in 300° oven until set and lightly browned. Let cool slightly before cutting into squares.

ITALIAN FRITTATA (OMELETTE)
6 large eggs
1/2 c. water
1/2 tsp. baking powder
3/4 c. flour
1/2 tsp. salt
1/2 lb. fresh cheese, diced
1/2 lb. Ricotta cheese
1/2 lb. hot or sweet sausage, cooked and crumbled
1/2 lb. salami, diced
1 tsp. oil
Beat eggs and water well. Add flour, baking powder and salt. Add fresh cheese, ricotta and sausage and salami. Mix well. In large skillet add oil and pour batter into oil when warmed. On medium heat, cook until crust forms on bottom. Flip over on large dish and slice back into pan to cook other side. Then bake in 325 degree oven for 20 minutes.

We use to make it by taking shredded Italian bread and mixing it with eggs, cheese, butter, pepper, onions and sweet sausage, and throwing it into the oven.

1 yellow bell pepper, finely chopped
125 g (4 oz) ham, sliced
6 eggs
1/2 cup (60 ml/2 fl oz) milk or cream

Prep Time: 10 minutes
Servings: 2
Ingredients
• 1 mild Italian sausage (about 4 ounces), casing removed
• 1/3 cup (about 2 ounces) chopped dried plums
• 2 tablespoons chopped roasted red peppers
• 4 large eggs
• 1 tablespoon snipped fresh chives
• 1/4 teaspoon salt
• 1/4 teaspoon pepper
• 2 teaspoons butter
• 1 tablespoon chopped flat leaf (Italian) parsley
• 1 ounce (about 1 1/2 tablespoons) soft goat cheese, cut into pieces
Preparation
In skillet, brown sausage over medium heat 5 to 7 minutes or until no longer pink, breaking up into crumbles; pour off drippings.
Add dried plums and red peppers; set aside.
In medium bowl, whisk together eggs, chives, salt and pepper until well blended.
In large skillet, heat butter over medium heat until melted; add egg mixture.
As eggs begin to set, lift edge with spatula and tilt pan to allow uncooked portion to run underneath.
Continue lifting and tilting until top is almost dry and bottom is golden.
Spoon dried plum mixture over one half-side of egg; sprinkle with parsley and goat cheese.
Loosening edge with spatula, carefully fold omelet in half to enclose filling.
Cover pan; cook an additional 1 to 2 minutes or until cheese just begins to melt.
Cut omelet in half; serve each on individual plates.
3 tablespoons grated Parmesan
1 chopped fresh tomato
1 tablespoon chopped fresh basil
1/2 cup (60 g/2oz)freshly grated cheese(any type)
In a frying pan with heated oil, add in the onions and lower the heat then add ham for a minute or two. In a seperate bowl, beat the eggs, milk/cream. Stir in the pasta, Parmesan,basil and tomato. Pour the egg mixture into the pan. Sprinkle with cheese. Cook over medium heat until the mixture begins to set around the edges.
