The shell cover is brown but inside the cocnut is white.

A coconut in its original state is green. The inside of the husk (which is green) is a sand coloured hairy shell, that when dried turns brown. Dependant on the age of the coconut, the inside has either a jelly coating and full of liquid. Awesome taste and many of the locals eat this on cabin bread.
As it dries it creates a white tough skin which becomes dried and further processed as desiccated, or similar.

Most people only ever see coconut as the dried nut, which is actually the seed of the plant. Similar to how a peanut looks.

The inside is white, the outside is brown. You can only eat the soft coconut on the inside and drink the milk, the outside husk is hard.

A coconut is brown.
If u eat a MilkyWay, you don't say it's white just because of the filling, do you?
Or if you eat an apple...
You say it's green or red, despite the inside flesh being white/yellowy.
Interesting but obvious question.
