Forschner has some really good inexpensive knives. Best boning knife I've ever used.
MAC makes a great santoku. Less than $50. This is a really great utility knife.
If you want to go with vanity, get a Shun. They look great, are very comfortable (if you're right handed), come very sharp but are a little tricky to keep sharp.
