Last year, one thing after another messed us up (one thing was rushing). How soon can we start baking the pieces? Are there any prep work we can do now? If you know of a website that contains directions/templates, that would be awesome. Thanks!

You can make it all at your convenience and then freeze it. Or bake your gingerbread pieces now and freeze them, then put it together closer to when you want to display it.
