10,000 is the optimum number of steps to take a day. However, go up to about 13000 to account for bouncing in a car or something similar.
I normally rack up over 30,000 steps a day.
To make sure you at least get 10,000 a day, be less efficient. If it's safe, park your car a block from work and walk to and from. If the place where you lunch isn't too far, walk. If you can go one way that's longer and another that's shorter, go the longer way. If you're trying to think out a problem, pace while you're doing it.
It's actually easy to rack up as many as 20,000 steps a day as long as you're "inefficient". It's fun to get as many steps as you possibly can, but don't let it interfere with your life. If you aim for 50,000 steps a day (like I used to) then you won't have time for anything else!
You've chosen a healthy mode of getting in your daily exercise. Those who walk at least 10,000 steps a day tend to have lower blood pressure, lower cholesterol levels, and better heart health. They also tend to be at a healthier weight.

I wore a step counter for a few weeks recently and I had no trouble totalling over 10,000 steps daily just through work and daily routine. I am a classroom teacher, in a rather large school. I don't sit much while working. occasionaly at computer of course, or grading something, though sometimes I stand to do that as well. My step counter was sensitive, even shifting from foot to foot was getting counted.
I had over 20,000 when I wore it for exercise in addition to work.

I agree with Orion that on his birthday may not be the best time to do something together. I admire your desire to have a special day with your stepchildren. I think it's a really great idea. I'd suggest that you do something computer oriented. Find a way that he can spend some time teaching you things that are important to him. A lot of parents are computer-illiterate and this might be a fun chance for him to brag about how smart he is. Have a fun time with whatever you decide and kudos to you for being such a great stepmom!

Think about what you can to your diet, not what we must take away. Integrate delicious veggies into your meal, rather than serving them on the side. Not only will they offset the fat with your chicken or meat, but the phytochemicals in fresh produce are which can prevent diseases.
