sweet potatoe pie comfort food at it's best (especially with whipped cram on top)

My evil son, who is visiting,
so he can take the iguana
back with him said,
"American Pie" is the best.
But I disagree with him,
I think that fresh homemade
Dewberry Pie is the best.
Basic Pie Crust :
2 1/2 c. flour
1 1/4 t. sea salt
3/4 c lard
3T fresh unsalted butter ( I make my own by over whipping cream)
6-7T. ice water
mix together with pastry blender or 2 knives.
Divide the dough in 1/2.
Roll out enough dough for bottom pan,
place it so, trim off extra.
Filling:
6 c. fresh Dewberries cleaned and hulled
1 c sugar
1/4 c. flour
2 T. fresh lime juice
1/4 t. Allspice
Stir all the ingredients together,
let sit, for 17 minutes
Pre heat oven 450 degrees F
Pour the fruit mixture into 9" prepared pie pan
Cover with the left over dough.
I like to make a woven crust so the juices do not make a mess in my oven.
Bake for 10 minutes.
Reduce the oven temp to 350 degrees F
And bake for 35 to 41 minutes or until golden brown.
Cool completely on wire rack.
Serve with hot herbal tea for adults
and warm cinnamon milk for the children.
About the flour: I use all purpose most of the time.
Self-rising is really not suitable for a pie crust.
Edit:
I like this pie the best because this is our family's favorite pie and it has been handed down for as long as I can remember.
We've had to make adjustments from time to time because the original was written in Gaelic, and there were no temperatures, just words like very hot. And the original in Gaelic just translated into "Wild Berries".

I love fresh homemade Apple pie because its the best thing to have on every holiday and i make them with powder sugar and ciminnon spice its the best

I still say, Chocolate Pudding Pie.
Sure, sometimes it doesent stay together, well...
But it sure is tasty!
if the pie crust breaks off of it and goes into the pudding..
Its kinda like cookies.
Trust me, Its a good pie.lol
