BEEF RANCH CASSEROLE
5-1/2 cups shredded beef or fully cooked brisket (shredded) or fully cooked shredded beef
2 Tbsp. vegetable oil
1 cup onion, chopped
1/2 cup red bell pepper, chopped
1/2 cup green bell pepper, chopped
2 Tbsp. fresh jalapeno, chopped
1 tsp. salt
1 tsp. pepper
1 tsp. cumin
1 tsp. garlic powder
1 Tbsp. chili powder
12 ounces canned evaporated milk
1 can diced tomatoes with green chilies
1 can condensed beef broth
8 ounces grated cheddar or Mexican blend cheese
12 corn tortillas
Directions
Add oil to large heated skillet and saute onion, peppers and jalapeno.
Mix in all spices and cook until onion is translucent.
Add milk, tomatoes and broth. Bring to a simmer.
Remove from heat. Stir in beef and cheese.
Cut tortillas into quarters and placed half into a greased 2-1/2 quart casserole dish. Top with half of the beef mixture. Repeat layers, ending with beef mixture.
Bake at 350°F for 30 minutes.
BEEF AND ANGEL HAIR CASSEROLE
1 lb of ground beef
1 (15 oz.) can of tomatoes
1 (10 oz) can of cream of mushroom soup
1/4 lb of sharp cheddar cheese
1 (6 oz) package of angel hair pasta, cooked, this is an estimated size bag- the orginal recipe called for 1 small bag.
1 (8 oz) can of tomato sauce
1/4 c. of chopped onions
1/4 c. of chopped bell peppers
1/4 c. of chopped celery
1 (8 oz) can of mushrooms
2 tbsp. of brown sugar or sweet pickle juice
2 tbsp. of Worcestershire sauce
salt and pepper
Directions
First you want to brown meat in large skillet or Dutch oven.
Then you can add in the onions, pepper and celery and simmer for approx. 15 minutes.
Next add in the tomatoes and tomato sauce, mushrooms, brown sugar and Worchestershire Sauce.
Finally add the salt and pepper to taste.
This will need to cook in a skillet for 1 hour.
Now you want to place the cooked pasta in bottom of large casserole dish.
Then follow by spooning the mushroom soup over pasta.
Then pour sauce over the soup and top with cheese.
Bake in 350 F. for 30-35 min.

Pizza Casserole
Ingredients
1 lb extra lean ground beef
1 can (15 oz) chunky Italian tomato sauce
1 can (10 oz) refrigerated pizza dough
6-oz slices low fat mozzarella cheese
zero-calorie, nonfat cooking spray
Instructions
Preheat oven to 425 degrees Fahrenheit. Cook ground beef in medium skillet over high heat until browned, breaking up with a spatula or wooden spoon and then stirring constantly. Drain excess fat, if necessary, then add tomato sauce to skillet and heat through. Grate cheese, and spray 13 x 9 inch pan with cooking spray. Unroll pizza dough and press into the bottom and halfway up the sides of the baking dish. Sprinkle half the cheese over the crust, then top with meat mixture. Bake uncovered for 12 minutes, top with remaining cheese and bake an additional five minutes or until crush browns and cheese melts.

BEEF CASSEROLE
2 cans of mushroom soup
1 container of sour cream (small container)
1 ½ lb hamburger
1 ½ box of cooked elbow macaroni
1 medium onion cut up or chopped
1 small can of peas drained
¾ teaspoon of salt
½ teaspoon Accent
Or 1 can of cream of chicken and 1 can of mushroom soup instead of 2 cans of mushroom soup
Brown hamburger in skillet, add onion. Cook macaroni following package directions, but leaving slightly underdone.
Pre-heat oven at 350 degrees. Put in casserole dish and mix all together.
Bake at 350 degrees for 30 minutes making sure dish is covered.
Optional: Add bread crumbs to the top of the dish being baked.
Optional: 3 cups of cooked noodles
