DUTCH FUNNEL CAKES
1 egg
2/3 c. milk
1 1/3 c. sifted flour
1 tsp. baking soda
2 tbsp. sugar
1/4 tsp. salt
3/4 tsp. baking powder
Beat the egg and add the milk. Sift the flour, salt, sugar and baking powder and baking soda together. To those add the egg and milk. Beat until smooth.
Holding your finger over the bottom of the funnel, pour some batter into the funnel. Drop batter into the hot deep fat, 375 temperature, swirling it into circles, from the center out. Make each cake about 6 inches in diameter. Fry until golden brown. Drain on paper towel and serve with powdered sugar, honey or your favorite jam or jelly.
Note: Funnel should have 5/8 inch opening.

Sift together
1 1/3 cups of flour
1/4 teaspoon salt
1/2 teaspoon soda
3/4 teaspoon baking powder
2 tablespoons sugar
Blend:
1 egg beaten
2/3 cups milk
Add to dry ingredients, beat until smooth.
Heat about 1 inch oil in a saucepan, pour the batter into a funnel and swirl it into the hot oil turn over to brown the other side.
Roll it in powdered sugar

2 beaten eggs

2 c. sifted all-purpose flour
1/2 tsp. salt
1 tsp. baking powder
2 c. cooking oil
Sifted powdered sugarIn mixing bowl combine eggs and milk. Sift together flour, baking powder and salt. Add to egg mixture; beat smooth. In deep skillet heat oil to 360 degrees. Covering spout with finger, pour 1/4 cup batter into funnel. Remove finger and release batter into oil in a spiral, starting in center and winding out. Fry until golden about 3 minutes. Turn carefully; cook 1 minute more. Drain on paper towel; dust with powdered sugar. Makes 6-8 funnel cakes.

Ingredients
1 cup water
3/4 stick butter (6 tablespoons)
1 tablespoon sugar
1/8 teaspoon salt
1 cup flour
1 cup eggs, about 4 large eggs and 2 whites
Vegetable oil, for frying
Powdered sugar, for topping
Directions
Boil water, butter, sugar, and salt together in a
saucepan. Add flour and work it in until it is all incorporated and dough forms a
ball. Transfer mixture to the bowl of a standing mixer and let cool for 3 to 4
minutes. With mixer lowest speed, add eggs, 1 at a time, making sure the first egg
is completely incorporated before continuing. Once all eggs have been added and
mixture is smooth, put dough in a piping bag fitted with a number 12 tip. Heat
about 1 1/2 inches of oil in a heavy pan. Pipe dough into oil, making a free-form
lattice pattern; cook until browned, flipping once. Remove cake from oil, drain on
paper towels, and top with powdered sugar. Continue until all of the batter is
used.

* 1 quart oil for frying
* 2 tablespoons white sugar
* 1 egg
* 1 cup milk
* 1/4 cup confectioners' sugar for dusting
DIRECTIONS
1. In a mixing bowl, beat together egg and milk. Beat in flour, salt, baking soda, cream of tartar, and white sugar until smooth.
2. Heat about 1 inch cooking oil in frying pan to 375 degrees F (190 degrees C).
3. Pour 1/2 cup batter through funnel into oil with a circular motion to form a spiral. Fry until lightly brown; turn over to brown the other side. Cook to golden brown, and remove to drain on paper towels. Sprinkle with confectioner's sugar while still warm.
