I have 2 boys and 1 picky girl to feed and myself... want something fun, not too hard and filling!!

Shepard's Pie

1 lb Hamburger
1 can of corn
Shredded cheddar cheese
Instant mashed potatoes

Brown 1 lb of Hamburger

When done put the hamburger in the bottom of a casserole dish. Top with a layer of shredded cheese. Top that with a can of corn (drained). Top that with mashed potatoes. Sprinkle more cheese on top.

Bake in over for 20 minutes at 350.

Potato Chip Pork Chops---Everyone loves Potato Chips!

Ingredients:
Pork chop Cutlets --- really good cuts of meat ONLY!
1 Egg
1 C. Flour
1 Bag of Potato chips
3 Ziploc throwaway bags

Put egg, flour and half of a bag of potato chips into three separate bags. Crush Potato Chips in Ziploc Baggy.

Dip your Chops in the Flour first, Moving on to the Egg next and then into the Crushed up Potato Chips. Place onto an ungreased baking sheet.

Repeat until you have enough for everyone. And then place it into a 375 oven for 25 minutes. Place under a broiler for about 1 and a half minutes until golden and crispy. Serve with any side dish you like and watch the empty plates happen!!

Meatloaf.

2 lbs ground beef
1 package of onion soup mix
Half cup of ketchup
1 egg
Quarter cup of bread crumbs
Pepper to season the meat
1 can tomato sauce

(Can also add one chopped onion to mixture)

Mix everything together except tomato sauce. Pour that over the meat before putting in oven. Cook at 350 for an hour.

Serve with veggies and rice. That's what I'm making tonight!

How about making breakfast for dinner? You can make eggs and pancakes (frozen if you have them) and top them with frozen blueberries that you warm up in the microwave or in a pot.

Kids usually love grilled cheese sandwiches and those are easy to make. You can serve them with some soup and a salad.

Chicken tenders are another thing lots of kids like. You can make your own and bake them instead of frying them by dipping in some mayo and then putting them in breadcrumbs mixed with parmesan cheese and baking them. The mayo keeps them moist or you can use eggs if you prefer.

You can make your own Chinese food with some cut up meat and frozen or fresh stir fry veges. Cook them in a little oil and add some soy sauce and a little garlic powder and a teeny bit of sesame oil if you have it (not too much, though, it is really strong).
Serve with rice. Success brown rice in the packets is foolproof and only takes 10 minutes to make.

You could make quesadillas with tortillas and cheese and or cheese and cooked chicken. Cut into wedges and serve with sour cream and salsa and avocado if you like it.
You could also make some beans and rice to go with it if you wanted to.

It's easy to make your own macaroni and cheese with a basic white sauce and you can add a couple of different types of cheese so it is more filling than the kind of stuff you get in a box.

Why not try a Hawaiian Haystack?

Cook rice, put in bowl
Cook up some cubed chicken (or shred leftovers from a store bought chicken dinner, or even the good canned chicken can be used) With or without a gravy/ sauce.
then in bowls fill with favorite and unusual things such as:
peas.
crushed pineapple
cheese
gr onions
coconut, shredded
chow mein noodles
marshineno cherries
etc. If you want Mexican Haystacks, get black beans, tomatoes, cheese, corn chips etc.etc

Watch the kiddies build their haystacks and enjoy a fun, good for you meal!

get some vegtables any kind your family will eat,
make some gravy, (chicken, beef, pork, mushroom?)
you could also add meat to gravy
add gravy and veggies in a baking dish
then make mashes potatoes put on top
then add a little butter across the top and bake for 30 minutes at 350, until top is browish

Or make: mini pizzas, get ready made dough or find a recipie then get sauce tomatoe, cheese any kind,( peperoni, green peppers, mushrooms, onions, broccili,chicken, sausage, ham anything else then add toppings bake for 35 minutes.

Then make chessey fries
wash whole potatoes peel or not, cut them long ways thing or big, then add seasoning, you can make them spicey, add cheese any kind, then add bacon bits. bake at 350 until cheese is melted, or brown whatever you want.

try this beeee-aaaa-utiful twist to chicken. it's called 'chicken pinwheel kabobs'

u'll need: skinless chicken breasts
1 oz of fresh basil leaves (is at giant eagle in a small plastic pouch)
tomato paste
minced garlic
kabob skewers
uncooked bacon slices
now, here's whatcha do

rinse and trim the chicken. then u need to take a knife, cut each one in half to make the next step easier. when u cut the chicken, the sharper the knife, the better. slightly pull it open as u cut and it's easy to slice the breast in half.
now take the chicken, pop it in a sandwhich bag, and flatten to 3/16". flatten to an even thickness.

now its time to prep the sause filling.

for the sause:
1 crushed clove of garlic per 2 tablespoons of tomato paste.
u can get a jar of minced garlic instead of cloved garlic; 1/2 teaspoon will equal 1 clove of garlic.

now for the fun part:
take ur flattened chicken, spread the tomato/garlic mixture evenly over each piece about 1/4" from the edges. then put 1 slice of bacon on top of that, then put some of the basil leaves over that.

this next part is tricky; the thinner the chicken, the easier it is. roll up each chicken breast firmly, but not so tight the sause oozes out. i highly recommend that u at first secure each roll-up with toothpicks, and stick in the freezer for about 5 mins to firm the rolls up....u'll realize why in the next step.

after 5 mins, take the rolled up chicken, and with a sharp knife(sharper the better), cut into 4 thick slices. on each kabob skewer, put 4 spirals on.

lightly brush them with oil on both sides. put skewers on broiler pan and broil on low for 5 minutes per side 6" from the coil. advisory: crack the door open when using the broiler. it wont take long.


about 3 of these spirals will do the job for me. serve with fresh tossed salad with dressing of ur choice. bon' appetito

btw, wait till ya crack open that basil. omg it smells sooooooo good.

Brown butter pasta with pine nuts

Boil a pot of water with about 1 tablesppoon of Salt
when boiling add your pasta. any kind is ok
follow package directions
As pasta is cooking

Take 1 cube of real butter in a saute pan and saute the butter Do not add anything else to it at this point.
Watch it carefully until it starts to turn brown but not black. it will bubble or form alittle. When it's light brown add 2 chopped garlic cloves and 1/4 cup of pine nuts saute for about 4 minutes.

Drain pasta and add to your brown butter sauce.

It's ready to serve with garlic bread
and a salad

My mom used to make these for us kids, and I made them for mine, and everyone loved them! They're very easy and very kid friendly...

Easy Sloppy Joes:
1 lb. ground beef
1 small onion, chopped (or half a medium onion)
1 can chicken gumbo soup
1/2 c. ketchup
1 tbsp. mustard
1 tbsp. brown sugar

Brown hamburger. Add everything else and stir until heated through. Spoon onto a bun. If desired, add a slice of cheese
and briefly microwave.

Almond Crusted Chicken Cutlets with Scallion Beurre Blanc
Serves 4
This is a rich, elegant dish yet it takes just minutes to cook up. If you make extra almond crust topping and sauce, you can also use it with pasta later in the week.

Ingredients
2 scallions, whites and greens, very finely chopped
1/2 cup dry white wine (eyeball it)
4 tablespoons heavy cream
1 large egg
8 pieces chicken breast cutlets (1 1/4 pounds)
1/2 cup sliced almonds
1/2 cup plain bread crumbs
1/4 teaspoon grated nutmeg (eyeball it)
Salt and pepper
1/4 cup light extra virgin olive oil (EVOO) or vegetable oil
1 stick cold butter, cut into pieces
Preparation
Combine the scallions, white wine and two tablespoons cream in a saucepan over medium heat and reduce to 1/4 cup liquid, about 5-6 minutes.

While the sauce is cooking, beat egg in a large bowl and set chicken into it. In a food processor, add almonds, bread crumbs, nutmeg, salt and pepper to taste; grind to combine. Cover a plate with plastic wrap to make for easy clean up after breading and pour almond and bread crumb mixture onto it. Remove chicken from the egg and coat in the bread crumb mixture.

Pre-heat oven to 250°F.

Heat three tablespoons EVOO or vegetable oil, about three turns of the pan, in a large nonstick skillet over medium to medium-high heat. Add cutlets and cook three minutes on each side. Transfer cutlets to an oven-safe plate; cover with foil and keep warm in the oven. Repeat with remaining chicken.

Whisk two tablespoons cream into the sauce, a splash. Lower the heat on the sauce and whisk the butter into the pot until it has incorporated. Remove from heat and season with salt and pepper to taste.

Place two cutlets on each dinner plate and spoon a little beurre blanc sauce over top of the cutlets.
