I need any cookie recipe that doesn't contain baking soda. Or any majorly weird ingredients. Just the basics. As in vanilla extract, sugar, salt, baking POWDER, etc.

Peanut Butter Cookies

1 cup of PB
1 cup of sugar
1 cup of flour(optional)
1 egg or 2 egg whites

Mix thoroughly.
Roll teaspoon full of batter into ball
Place on ungreased cookie sheet about 1 inch apart
Mash with fork
Bake at 325 degrees for about 8 minutes

****Recipes usually ask for baking soda more often than baking powder, baking soda is not that exotic


Crispy Skillet Cookies
This old recipe for no bake cookies is a real winner. The richness of the melted dates and the crispiness of the cereal are a fabulous contrast.
INGREDIENTS:
1/2 cup butter
1 cup sugar
1 cup chopped dates
1 egg, beaten
1 tsp. vanilla
2-1/4 cups rice krispies cereal
powdered sugar
PREPARATION:
In large saucepan, melt butter over low heat. Remove and add sugar and dates, mixing well until combined. Return to heat and cook, stirring constantly, for 4 minutes. Then add beaten egg, and cook, stirring constantly, until the ingredients are all melted together.

Add vanilla and rice krispies; remove from heat. Stir until combined. Drop mixture by teaspoonfuls into powdered sugar and shape into balls. Store covered in refrigerator. Makes about 2 dozen cookies

Here are a couple that don't call for baking soda...

Sugar Cookies:
3 1/2 cups (490 grams) all purpose flour
1/4 teaspoon salt
1 teaspoon (4 grams) baking powder
1 cup (227 grams) unsalted butter, room temperature
1 1/2 cups (300 grams) granulated white sugar
2 large eggs
2 teaspoons pure vanilla extract

In a separate bowl whisk together the flour, salt, and baking powder. Set aside.

In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugar until light and fluffy (about 3 to 4 minutes). Add the eggs and vanilla extract and beat until combined. Add the flour mixture and beat until you have a smooth dough.

Divide the dough in half and wrap each half in plastic wrap. Refrigerate for about one hour or until firm enough to roll.

Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Line two baking sheets with parchment paper.

Remove one half of the chilled dough from the refrigerator and, on a lightly floured surface, roll out the dough to a thickness of 1/4 inch (1 cm). (Keep turning the dough as you roll, making sure the dough does not stick to the counter.) Cut out desired shapes using a lightly floured cookie cutter and transfer cookies to the prepared baking sheet. Place the baking sheets with the unbaked cookies in the refrigerator for 10 to 15 minutes to chill the dough which prevents the cookies from spreading and losing their shape while baking.

Note: If you are not going to frost the baked cookies, you may want to sprinkle the unbaked cookies with crystal or sparkling sugar.

Bake cookies for about 10 minutes (depending on size) or until they are brown around the edges. Remove from oven and let cookies cool on baking sheet for a few minutes before transferring to a wire rack to finish cooling.

Chocolate Chip Cookies:
4 1/4 to 4 1/2 cups flour
2 teaspoons baking powder
2 teaspoons salt
2 cups shortening
1 1/2 cups white sugar
1 1/2 cups brown sugar
4 eggs
2 teaspoons vanilla
2 (12-ounce) packages chocolate chips

Mix flour, baking powder and salt together. In a separate bowl, mix shortening, sugar, eggs and vanilla. Add flour mixture and chocolate chips.

Spoon a heaping tablespoon of cookie dough onto baking sheets and bake about 10 minutes in 375-degree oven. Cookies should be soft when they are taken out of the oven. Let the cookies sit for about 1 minute before removing them from the cookie sheet.

FYI... Baking powder is baking soda with cream of tartar.
