This is the one I have tried.

3 (50 g) cans anchovy fillets
6 tablespoons milk
150 g unsalted butter, softened
1/8 teaspoon fresh ground black pepper
1/8 teaspoon cayenne pepper


Drain the anchovy fillets and soak in the milk for 10-15 minutes.
Drain off the milk.
Put the anchovies, butter, black pepper and cayenne pepper into a food processor and puree to a smooth paste.
Pot into a small cooled, sterilised jar and seal.
Store in the fridge for up to 3 weeks.

UNSALTED butter though - plenty of salt in the anchovies!!

No, but there's always anchoiade, which is the rustic french version of same;

pound a tin of anchovy fillets in a mortar and pestle with three peeled and crushed cloves of garlic. Add a glug of balsamic vinegar and another of olive oil, to make a chunky paste. Add freshly ground black pepper but NOT salt.

Toast bread on one side. Spread this on the untoasted side. Put it under the grill till it bubbles.

A very refreshing starter, this, especially for something relatively bland like fish. Eat with ballsy red wine.

Personally, I hop on the train, taxi round to Fortnum's and buy my tub ready made for me...
