Sweet Potato CasseroleSide Dish
3 cups mashed sweet potatoes
1 cup sugar
1/2 cup butter
2 eggs
1 teaspoon vanilla
1 cup chopped nuts
1 cup coconut
1 cup brown sugar
1/3 cup flour
1/3 cup melted butter
Combine first 5 ingredients and pour into a baking dish. Blend coconut, nuts, brown sugar, and flour. Then add melted butter. Sprinkle over potato mixture. Bake at 375 degrees until brown, about 25 minutes.
The Coconut and Nuts are optional, but they just add something to the dish!!!
This is a family recipe... and it is delicious!!!!

There are two ways I like to prepare Yams or sweet potatoes.
1). Wash an dry them leaving the peel on ,then rub butter with your hands till the peel is completely covered. Prick holes in holes in the skin and bake at 325 degrees for 1/2 hour. when done slice in half , add butter and Cinnamon. Or use your brown sugar and butter two eggs and 1/2 cup of brandy mix together with the mashed sweet potatoes and bake on deep dish pan. top with Cinnamon Good Luck

We like the totally different direction that this recipe takes.
Sweet Potatoes with Chipotle Peppers
2 large sweet potatoes, peeled and cubed
2 - 3 tablespoons unsalted butter
1 - 2 whole chipotle peppers (canned) in adobo sauce, chopped
1 - 2 teaspoons adobo sauce from the can of peppers
1/2 tsp kosher salt
Put cubed potatoes into steamer basket and place steamer into a large pot of simmering water that is no closer than 2 inches from the bottom of basket.
Allow to steam for 15 - 20 minutes or until the potatoes are fork tender.
Add butter to potatoes and mash with potato masher.
Add peppers, sauce, and salt and continue mashing to combine.
Serve immediately.

My favorite is just to bake the whole sweet potato in the jacket. rub outside with a little oil then put them in the oven on 400 for an hour.
serve butter and brown sugar on the side.

i have recently discovered the ultimate solution to the cooking of a sweet potato. six minutes in the microwave (1 potato). oddly enough, i popped one in about an hour ago, which i will heat up when i am ready to actually eat it. i am diabetic and the sweet potato is a wonderfully nutritious item. a couple of pats of butter will not kill you and then it is rather tasty and filling. sweet potato and juicing carrots and such is the new cornerstone of my diet. it took me several years to discover going without meat (other than fish, eg cod or salmon) makes a huge difference -- appetite lower, sugar level lower etc.).

peel, cut up, boil, then mash up like white potatoes, but add butter (margarine) and brown sugar.
or
