That's obviously a loaded question, but I'll answer anyway. Animal sacrifice was a mitzvah (commandment) dependant on the existence of the Temple, that is, it came to be that sacrifices were only allowed AT the Temple. Circumcision was not - it's a mitzvah incumbent upon all Jewish males, whether the Temple is standing or not. Hence, one is still practiced, the other is not. Most authorities maintain that when the Temple is rebuit, the offerings will be resumed.

We don't practice sacrifices since there is no temple at which to sacrifice

We don't ptractice gnital mutilation, nor have we ever. What we do practice is circumcision which the World Health Organisation has started recommending doing on a mass basis due to its health benefits. What do you know- the 3500 year old dcument told us to that which is best for us- as it always does!

Sacrifices are no longer allowed since the Second Temple has been destroyed, and circumcision is not "genital mutilation", as you put it. Get some education before you start even trying to insult my religion.

Animal sacrifice can only be performed at the Temple. the Temple was destroyed a long time ago, and has not been rebuilt.

The circumcision is representative of the covenant made with Abraham, which is still in effect.

EDIT: Medic. Back in ancient times when bathing was rare, that would have been true. most doctors are no longer recommending it though.

First, they probably should practice animal sacrifice. However Circumcision was not created as a mark for Jewish persons. It was actually healthier for the boy and it became popular among the Jews. That is why most doctors still recommend it today, it helps prevent infection.
