I'm sure MS 2007 has added a few more capabilities, but you will want to tear your hair out finding them. I've been working with Word for 10 years - from Office 97, to 2000, to 2003. The transition was fairly painless, however, 2007 is entirely different and takes us back to square 1. I have to search and research to do that which I've been doing for years.

2007 has a few built in tools and functions, along with more themes and better security... but by default saves items as a .docx which is not compatible with any of the older versions of office. You can save as an older format, but the features are taken away from that document.
the formating is also nice because it allows you to preview by hovering over items without applying them.

Mostly the main differences are just the interface and where everything is located but I expect there are some new features. For instance you can download an extra that will allow you to save your Word Docs as PDFs. There are some other features too that are different.

All it has done for me is to create incompatibility issues with my older software.
