i have some liver but dont know how to cook it

I'm hoping it's beef liver. Pork is too grainy to be good. The secret to frying liver is to do it fast and not too long! Heat the oil in an iron skillet, flour the liver and put it in the heated oil. I fry it quickly until well browned; then turn and fry the other side. As soon as the "pink" is gone, I lift it onto paper towels. For seasoning, I use salt and pepper. While the liver is draining, I put sliced onions in the pan drippings and cook just till tender, again with salt and pepper to taste. Sometimes I like to make gravy over the pan drippings and cooked onions and then return the liver to the skillet with the heat off. Serve with creamed potatoes and a nice green salad. NEVER overcook liver! (unless you enjoy eating shoe leather).

Baked Liver & Onions

4 serving size slices of beef liver
Salt and pepper to taste
Flour for dredging
1 egg beaten with 1/4 cup milk
1/2 cup of fine dry bread crumbs
8 strips of bacon

Spray with Pam or generously butter a shallow baking pan. Salt and pepper the liver slices then dredge lightly with flour. Dip floured slices in egg and milk mixture, then in bread crumbs. Lay liver close together in pan and cover with bacon. Bake in 350ºF. oven until bacon is crisp and brown, about 30 minutes. When bacon is done, liver is ready to serve. Serves 4.
