i just need the steps needed to prepare a good fried rice

Well im not sure about Fried rice but if you dont want rice to stick before its done you put it in one of those French upside down pans with holes in (the ones you use for spagetti) Then you drain it and mix it round and continue to cook the rice! Then it will not stick and it will be nice and fluffy!

Egg-fried rice


Serves 4



Preparation time less than 30 mins

Cooking time 10 to 30 mins






Egg-fried rice is easy to prepare and tastes great as a meal on its own. For the best result, make sure the rice is cooked and cooled beforehand so it won't stick together when frying.
Ingredients
1 egg
2 tsp sesame oil
2 tbsp vegetable oil
200g/7oz long-grain rice (uncooked weight), cooked and left to go cold
100g/4oz frozen peas, defrosted (rinse under warm water to do this quickly)
4 spring onions, finely chopped
100g/4oz bean sprouts (optional)
1-2 tsp soy sauce
ground white pepper



Method
1. Beat together the egg and sesame oil and put to one side.
2. Heat the vegetable oil in a wok or large frying pan. When it's shimmering and almost smoking, add the rice and stir-fry for about 3-4 minutes until completely heated through.
3. Add the peas, spring onions and beansprouts, if using. Stir-fry, turning the rice constantly around the pan, for about 3 minutes. Season well with soy sauce and pepper, then push to one side of the pan. Pour the beaten egg mixture into the other side and leave for about 10 seconds so it begins to set. Using a chopstick, briskly swirl around the egg to break it up and then toss around with the rice. Stir-fry for a further minute and serve straight away.

Tip:
You could include some extras like chopped ham, cooked prawns or sweetcorn, when adding the peas.

there are so many different ways and methods for fried rice.

This is how i make mine

Cook some white rice, and set it aside
In another pot, put some diced meat, vegetables, onions, spices and whatever else you want in the fried rice (we'll call this 'seasoning')
Take a fry-pan and oil it lightly.
Put about a cup of the rice in it, add some of the seasoning in with it. Use a wooden utensil to mix it around in the fry-pan until it is well mixed.
Repeat until all the fried rice is done.

Start off with cold boiled rice. Boil some white rice well in advance and keep it in the fridge. It has to be cold rice as freshly boiled rice tends to be moist and will turn to mush when you fry it.

Chop an onion and crush a couple of cloves of garlic and fry in hot oil till golden and aromatic. Add some chillies (if you're adventurous) and the rice and stir till coated with the oil and hot.

That's really it. Other things are varieties to the theme.

To add meat/chicken, fry the meat/chicken in hot oil before you fry the onion & garlic. Make sure the meat/chicken is cooked through (it helps if you cut the meat/chicken thinly as this will cook faster), scoop it out onto a dish and use the same oil as what you used to cook the meat/chicken to fry the onion & garlic. Do as the basic steps above, and add the meat/chicken to the rice at the end.

To do egg fried rice, do the basic steps above. After the rice is coated with the oil and is warmed up, push the rice aside in the pan to create a little crater. Break a couple of beaten eggs into the crater and wait till it cooks/sets a little then mix the rice into the egg mixture. Stir fry till golden.

You can also add vegetables before you mix in the rice. Just stir fry till tender and then mix in the rice.

For some more variety, add thinly sliced or grated ginger after you've added the rice. Or sprinkle some sesame seed oil onto the rice as it's cooking. Or sprinkle some Nam Pla (Thai fish sauce) on the rice, or some belacan (Malay shrimp paste into the oil with the onion & garlic.

Be as creative as you want to be.

you will need boiled rice, plus meat and veggies that you want to add.

When I make it, I would stir fry the meat for a while, then add the veggies, until its all just cooked. You can add in some soy sauce, or whatever other flavouring you might want such as garlic or ginger.

The, take out the meat and veggies and add a few beaten eggs.

Cook the eggs for a short while, as if to make an omellete, then break it up as it is cooking, so its like a broken up omelette.

Then you can add in the rice, meat and veggies and give it a good stir and cook to make sure everything is hot and coated in the soy and the egg is well distributed through it.

You will want to completely cook and cool your medium grain white rice fully before going further. (also...cut your water a 1/2 cup short then what the package directions call for.)

Get that pan smoking hot with oil for your cooked and cooled rice. Add and stir fry with egg, green onion, salt, pepper, soy sauce...and whatever other Asian condiment you like best.

I have unfortunately NEVER found or cooked a recipe that makes fried rice like from your local Chinese joint...but its still good none the less.

I use cooked cold Jasmine rice. I use part peanut oil, and part sesame oil, and fry most of my veggies first..I like to put diced carrots, peas, onions, garlic and ginger. When the onion is translucent, I add a package of bean sprouts. I stir in the rice, some diced ham, and green onions, and then my soy sauce.
Sometimes I go nuts, and add those little salad shrimps and scrambled eggs, and it's a meal all on it's own.

Day Old or Next day rice is best - its not as wet.
Add some oil to wok/large skillet
Add minced garlic
Add rice
Add any kind of left over veggie or mixed veggie bag (carrots, peas)
Fry up and add Light Soy Sauce
Yum!

If your filipino inclined add a fried egg and YUMMY!!

boil it first for a few minutes drain well, mix in some oil the fry quickly with plenty of heat

boil the rice in the normal way then cool it overnight in the fridge.....then Fry in pea nut oil.....it will taste great...good luck
